NEW SHOW ANNOUNCEMENTS
From Ray
While taking a year off from booking duties I can honestly say I never really stopped thinking about shows that I wanted do. When it came time to start looking ahead a little, it was pretty easy to pick the shows I wanted to go after. What we ended up with for later this year was 2 of the most hallowed singer-songwriters in American music, an old favorite and a new favorite. I am proud to announce the following........ Wednesday 8/1, Chuck Prophet and the Mission Express - 25$ - This could be the all-time fan favorite show here. This will be our first standing show per the artist's request. Chuck is bringing his full band, 5 pieces, and this will be a rocking show. I know this one will sell out QUICK! - There might be some limited seating with a limited view. - chuckprophet.com Wednesday 9/5, Chris Smither - 25$ - If you don't have any Smither, it is something that needs to be in everyone's library. While I have never seen Smither, his shows have a reputation that will certainly precede him. Like John Hammond his career began in the 60s. His songs have been covered by some of the biggest artists in music. He will be touring to promote his upcoming cd release "100$ Valentine" - smither.com
Thursday 10/25, Ray Wylie Hubbard - 20$ This will be a Duo - He might be best know for the iconic song "Up Against the Wall Redneck Mother". When I ask the artists that come here who would be good to have play here, his name has come up more than anyone else, period! The people whose music I revere, revere this guy. He is referred to as the Wylie Lama of Texas music. I have seen this show and I can honestly say it was one of the best performances I have ever seen. His shows are full of stories and rye wit - raywylie.com Wednesday 11/21, "Thanksgiving Eve", Miles Nielsen & the Rusted Hearts - This show was so good we just have to do it again. Just like when they were here a few weeks ago. milesnielsen.comWe will announce all regular ticket sales sometime in the future via our weekly newsletter. Save your dates. As we get a little closer we will provide a little more about each artist but I just wanted to give you all, a heads up Thanks Ray BTW, Our Alejandro Escovedo show is almost sold out. Get your tickets quick. This past Sunday night Alejandro was on Austin City Limits, probably today's most watch music program. How cool is that? Here is the link to that show and make sure you view it full screen. Alejandro Escovedo on Austin City Limits AlejandroEscovedo.com

American Tradition
Kentucky Derby and Mint Juleps
By Jimmy
And they are off........ Yes, it is getting to be that time of year. Although, Kentucky is known for its bourbon, it is also home to hosting the first leg of the Triple Crown of horse racing. And it seems bourbon and horseracing go hand in hand. Every year since 1875, on the first Saturday in May at Churchill Downs racetrack, thousands of people come together to witness " the fastest two minutes in sports", the Kentucky Derby. In addition the race itself, as you can bet, there are a number of traditions that play a role in the event. Other than "Millionaires Row", the expensive box seats that hold the rich and famous, the track infield seems to be the place to be to have fun. The mint julep has been associated with the Derby since 1938 and each year over 120,000 juleps are served at Chuchill Downs over a two day period. The exact origin of the mint julep is unknown, but one legend has it that a 19th-century Kentucky boatman on the Mississippi River went ashore in search of spring water to mix with his bourbon. On a whim, he is said to have added some mint growing by the spring. This week and next leading up to the race (known as Derby Fever), we will be featuring these original classic cocktails. Come and taste what is made at Churchill Downs. Fresh mint muddled with sugar and Kentucky bourbon whiskey served over crushed ice. You do not have to be at the Derby to experience one. Remember, these are made fresh, by hand just like at the Derby. I know you will enjoy this perfect spring sipper, I can bet on it. "A mint julep is not a product of a formula. It is a ceremony and must be performed by a gentleman possessing a true sense of the artistic, a deep reverence for the ingredients and a proper appreciation of the occasion." -- Lt. Gen. S.B. Buckner, Jr., 1937 We have many small batch bourbons for sipping and savoring. Basil Hayden's, Baker's, Blanton's Single Barrel, Bulleit, Knob Creek, Old Charter, Old Fitzgerald, Woodford Reserve, Eagle Rare, Buffalo Trace.

On Special Quiche Lorraine, Mesculyn Salad & Soup Combo By Aly
Currently on special we are offering a mini pan of Quiche Lorraine with our mesculyn, walnut and gorgonzola salad, served with a cup of our soup of the day. Quiche itself is considered to be french. Its origins can be seen in English cuisine dating back to around the 14th century. For those of you who may not know what exactly quiche is, well it is most easily described as an open faced pie or pastry dish that is filled with a savory custard filling, meat, cheese and vegetables. There are many different variations of quiche depending upon what type of meats, cheeses and vegetables are used. We have chosen to serve our own variation of a traditional Quiche Lorraine made applewood smoked bacon, comte cheese (which is french and its taste is strong yet sweet... it is delicious!) and caramelized vidalia onions. I recommend coming in and trying this dish pronto because we only make a certain amount of fresh quiche daily. We have we selling out of this special every day!

New Wine List Addition
The Black Chicken
By Ryan
Located in the Oak Knoll district of Napa Valley, Robert Biale Vineyards is a family owned site that specializes in growing the zinfandel grape. This immigrant Italian family began their farms operations in the late 1930's. At that time they mostly sold produce along with a steady supply of leghorn chickens that allowed them to also sell eggs. The grapes they did have, were sold to many of the surrounding Napa Valley wineries. Some of the grapes however, were reserved and Aldo Biale, was able to make wine quietly for family and friends.
Aldo eventually became very skilled at wine making. This was a private endeavor that he had taken upon himself. And so it came to be that Aldo would privately sell some of his wine to a few wine loving Napans. Aldo's home phone was considered a "party-line" or public line that was frequently eavesdropped upon. He was concerned that his secret operation would be discovered. To keep things quiet, he created a code name for his wine. That code name would become known as, "The Black Chicken." When his customers would call they would order some produce, maybe a few cartons of eggs and "A Black Chicken." Upon his delivery, would be a bottle of his secret zinfandel.
 | Rita and Denise at Biale Winerie |
Today, Aldo's son Robert and a close childhood friend run thevineyard. Their zinfandel has a sort ofcult following amongst zinfandel fanatics. Zinfandel is beginning to "claim it's place among the pantheon of the world's most respected and captivating wines." The old vines used to produce these grapes give a very unique taste profile of the Robert Biale Winery. There is also a very small yield per vine that help make "The Black Chicken" one of Napa's most sought after Red Zinfandel's.
"The Black Chicken" is now on our wine list.
