I was on vacation last week skiing in California and attending the Fancy Food Show in San Francisco. One evening while contemplating a place to eat, we were grooving to the song, by the Spampinato Brothers, A Bear is a Bear is a Bear. This gave me the idea to go back to a Lake Tahoe institution, Bacchi's. It has been many years since we stopped in this place which is famous for its minestrone and family style ski-fare. They have been operated by the same family since 1932. They have survived 40 foot snowfalls, the depression, and the re-routing of the main Lake Tahoe highway away from their front door. The reason I got the inclination to go was because back in December the owner made national news by shooting a bear in his dining room. Somehow this video has mysteriously disappeared from the internet. It is listed on hundreds of sites but it is gone from all of them.

As we walked in it looked like a pretty quiet night. The first thing I ask the bartender "ok where was the bear shot?" The bartender replies "I shot him right where you are standing." Oh my lions tigers and..... I ask "So you must be the owner?" He replied "yes" and you could tell he was already on the defensive. The reason being there are a lot of "treebear huggers" out there. "It was the fourth time the same bear broke in here and the last." He seemed very reluctant to talk about it any further. As we sat at the bar we started to talk and I found out he is the third generation owner and about my age. Of course with two restaurant owners at the bar and drink involved the topic quickly changed to something much more dangerous to our businesses than bears. At least to us anyway.

 
Since I left a week ago Tuesday I have been trying to avoid the news, mostly the news in Illinois. In asking about his business, which is customary amongst two restaurateurs, he started to talk about the business climate in his state of California. I think most people, at least most business people, have that impression that California is the hardest state in the Union in which to run a business and is also the state that has the worst financial condition. I said "wait a minute Bill, I just found out today that my income tax went up 66% and my business' income tax went up about about the same. How would you like that?" We went about crying on each others shoulders and comparing notes. Our sales tax is about the same. California's income tax is much higher at 10%, but the property taxes are much much lower. Illinois property tax, at least from my experience, are 300% to 400% higher than in California. I also tell him "we have had 3 governors in prison or going to prison and in our last election in November the governor candidate that won 99 of our 102 counties lost the election. I am starting to wonder if it is all hopeless". Bill just smiled. After this he opens up a little more on the bear experience and tells us about the whole event.

How ironic that I was comparing notes with a restaurateur from California and I could make the case I was worse off than he. As the week goes on, I started to make other comparison's with California, the state that supposedly is in the worst financial condition of any. California's debt per person is about half of what ours is in Illinois, depending who you listen to and what you include.

In California, Jerry Brown is saying he is cutting spending and it seems like he really is going through with it. With our tax increase we got a promise they would limit spending increases to 3%. To me, it did not seem like there was any honest discussion of any spending cuts at all. From 1997 to now, spending has increased at an average 5.7% per year while revenue has increased at 3.4%. Almost every family and business in Illinois has had to make some spending cuts. It is infuriating to think that our elected government thinks they don't have to share in the pain. I really do not understand how this fiscal idiocy can be justified. With all this increase in spending in the last 13 years, please tell me what has gotten better in Illinois?

Finally, I thought if Bill and I were manufacturers at least we could move our businesses to Florida or Texas where our share of the pie would be 10% bigger. But we can't. Our hard assets and our customers are tied down. Our businesses as well as our homes become less valuable. But what is exponentially more important to me is that our customers share of their own personal pie is getting smaller. Every single tax paying entity in Illinois now has 3% less pie, 3% less to spend at eating places. As the week went on, I heard the governor of Wisconsin is actively enticing businesses to move there. He has a plan to offer businesses relocating a period of lower or no taxes on top of the state's much healthier fiscal condition.

In speaking of Wisconsin, I am trying to go back full circle where I started, with the Bears. The last couple of years I started watching the Packers. I realized that I really like the way they play. They had to make that difficult choice of getting rid of a Hall of Fame quarterback. They are dedicated, work hard and are very efficient. I like almost every one of their players. The team and their fans have fun.

I love my state and I love the Bears. I think we live in the best area in all of the Midwest. I have to be honest I am starting to root for the other team. It might be the only way things could change for the better, permanently. A Bear is a Bear is a Bear.

Stage 212
Having a Wonderful Time, Wishing You Were Her

stage 212We have a great little secret just a block away from our restaurant and that is our local theater, Stage 212. Every few months they put on a play for a couple of weekends. This weekend, shows will take place on Friday and Saturday night at 7:30pm and then again with a Sunday Matinee at 2pm.

The show this weekend and next weekend, February 4th through the 6th is, "Having a Wonderful Time, Wishing You Were Her." The story follows three couples, at various stages in their relationships, through an increasingly tangled web of infidelities, double standards and midnight rendezvous, all culminating in a no-holds-barred weekend in the country. The box office is open Monday thru Saturday 11am to 2pm and on Wednesday from 9am to noon. Call 815-224-3025 for tickets and remember, we are here before the show or after, whether it be for dinner or just dessert. Even your taste buds deserve an encore!

As I mentioned above, we were in California to go to a food show. The Fancy Food Show is held annually in San Francisco in January and on the east coast in July. This show is about fifty percent for the the gift shop trade and fifty percent for the food service trade.

I had never been to a major convention or trade show outside of the ones I have attended in Chicago. I was attracted to this show for a few reasons. Number one, it is the most unbelievable buffet anyone could ever go to. 1300 different exhibitors with everything from tea to crumpets and curds to whey. Almost every booth is giving away several different samples to taste. It can be overwhelming.

Number two was that one of our main suppliers only exhibits in San Francisco and the east coast. So if I want a better insight into their product lines, this is where I have to go. Several years ago they exhibited at the National Restaurant Show and a version of the Fancy Food Show that used to be held in Chicago, but that was before we did business with them. One thing you should know that I found interesting, I was told the reason they only do the shows on the west and east coasts, is that it is cheaper for them to go there than to exhibit in Chicago. This is interesting because their office and warehouse is in Chicago.

food showI also go looking for trends which can be easy to spot in a venue like this. Sorry I can't share the food trends with you. The trend that struck me the most was not necessarily a food item. It was the amount of what appeared to be newer or brand new businesses. Since I only have McCormick Place in which to compare to, I am not sure if this is something that happens every year here or if it is a good sign for things to come. People starting businesses is good for the economy.

What convention would not be complete with out the extra curiculars and for a food show that is going out to eat. Personally I am attracted to the classics and stay away from the groove. We went to the Tadich Grill, the oldest business in California operating since 1849, the gold rush days. This is the American Berghoff! A place so old school they don't even have a website at least not really. Every waiter, and they are all waiters, mostly middle aged provide service so professional it looked like a high speed tilt-a-whirl ballet with grey hair. Also we had to stop at the Buena Vista, a San Francisco tradition since the early 1900's and supposedly the home of the original Irish Coffee. Our bartender told us they have served as many as 6000 in one day. Of course I got a real good seat so I could see the entire process. Ours are just as good by the way, but not as classic. One other interesting thing was that Emerille Lagasse was filming at both these two places on the day that we were there.

Things to Try This Week

Here are three things picked by our staff, the people who know our menus the best, that they think stand out from the more than 500 items you will find on our food and drink menu.

shrimpFrom Jim - Shrimp - I am a shrimp lover and if you check out our menu, there are a ton of different ways you can have it here. Well this past weekend, I visited a local seafood restaurant and tried one of their shrimp dishes. There was a variety of breaded, scampi and plain broiled, but they were those prebreaded frozen butterflied shrimp that just do not have any flavor. They taste as plain as the cardboard box they come in. I was disappointed with the quality because it was not what I was used to. I must say that the Uptown shrimp is so much better. Here we have large jumbo shrimp where you actually get more than one bite out of them. Our fried shrimp are breaded fresh to order with seasoned flour so they actually have some flavor. Our garlic shrimp are packed with garlic flavor from our housemade garlic herb butter and the lemon caper shrimp are full of the citrus flavor. No need for extra lemon with these. Next time you're in, scan the menu for all of the different ways we offer shrimp. I am sure you will find something you like.

- Half Pound Burger - Everywhere I go to eat, I always have to try the burgers. I love burgers, and I love them with "the works". When I started working here, I was surprised I actually hadn't tried the famous half pound burger. Well I sure was missing out! This burger is so juicy, and probably the best I have ever had. I top mine with lettuce, tomato, onions, pickles and ketchup. Come in and put whatever you like on yours, it will still taste delicious. Don't forget to make it a double burger if you are really hungry.

- Italian Beef - This week, I urge you to try our Italian beef sandwich. It's not the most inventive special on our menu, but it will not disappoint. This is not meat out of a can here. We pile slices of our delicious, slow roasted prime rib onto a fresh baked Italian roll and top it with mushroom, onion, peppers and provolone cheese... a winning combination! This special is not around all the time, so try one before it is too late.

Samantha Crain is from Shawnee, Oklahoma and is of Choctaw heritage. Shawnee is a town whose remote location influenced her quirky, earthy interpretation of folk music. She often played as part of the Ramseur Records band, Samantha Crain and the Midnight Shivers. Although inspired by the sounds of her father's music collection, including Bob Dylan and the Grateful Dead, an adolescent Crain took even greater solace in the music of her home state, from the rootsy Americana of Woody Guthrie to the sonic experiments of the Flaming Lips.

Fred Eaglesmith and the Ginn Sisters is a show you want to be here for. Country-folk singer/songwriter Fred J. Eaglesmith was one of nine children born to a farming family in rural southern Ontario. Eaglesmith gradually became an underground favorite in his native Canada during a relentless touring schedule with bassist Ralph Schipper and mandolinist Willie P. Bennett. Eaglesmith won a Juno Award for Best Roots and Traditional Album - Solo, is a winner of the Canadian Independent Music Award, and was a finalist in the 2006 International Songwriting Competition for his song, "Alcohol and Pills."

Joey Spampinato is a founding member of NRBQ, the only band to appear at the Berlin Jazz festival, the New York Folk Festival, and the Grand Ole Opry in the same year! About 25 years after NRBQ's formation, Joey had welcomed his brother Johnny into the band. Joey and Johnny now are doing what they knew they should always have been doing, recording and performing music together as the Spampinato Brothers. Joining them, Aaron Spade plays the guitar and Jay Cournoyer is on the drums.

Some of you may already know, but Bill Kirchen will be the last show at the Playlist Theater! Famous for his indelible Telecaster sound on "Hot Rod Lincoln," his 1972 Top 10 hit with Commander Cody, Kirchen has been everywhere since he first became known during the mid-'60s. He was a founding member of the legendary Commander Cody and His Lost Planet Airmen, he's released eight critically acclaimed solo albums, he's toured internationally with Nick Lowe and has performed with the likes of Doug Sahm, Gene Vincent, Elvis Costello, Dan Hicks, Emmylou Harris and Link Wray.
