New Items from our Import House
By Ray
One of my favorite times is when our import delivery comes in. About
once a month we have to restock and it gives us an opportunity to try
new products. Their sales staff fills us in as to what is popular
amongst the restaurants and specialty stores in the city.
Here are some
of the new things we received for this month. We hope you enjoy them.
La Quercia Heirloom Proscuitto
- We have had this product before but not in this form. It is very
expensive per pound but there is no waste and it can be sliced ultra
thin the way proscuitto should be. Made in Iowa La Quercia is widely
considered one of the best proscuittos in the world. LaQuercia
Daelias
Cheese Bisquits
- We wil be adding these to our cheese sampler. A fruity little biscuit,
like a very thin biscotti, with a hint of spice, perfect with cheese.
Altaj Saffron - Real saffron from Spain. This tin was almost 100$, but there is no substitute for real saffron.
Blis Small Batch Maple Syrup
- Also being added to our cheese tray in lieu of honey. This product is
amazing. Pure maple syrup aged for over a year in bourbon casks.
Le Delice de Jura - This new cheese on our sampler will be the number one, the most mild cheese. Delice is a triple cream from France. It is full, slightly earthy, lending layers of taste
sensations, melting smoothly onto the palate.
Castello Blue
- This is soon to be our number five. As a
blue cheese, its mild flavor intensifies with time, but never
becomes strong and has an incredibly creamy consistency. |

Hey, Illinois, How do you Feel? By Ray

Things in our state have not been on the right track for some time.
This article from last Sunday's Chicago Tribune highlights were we
stand in comparison to our fellow states. Some of the interesting ranks
I thought were.....
Low Lights 43rd worst unemployment rate, according to U.S. Bureau of Labor Statistics 47th worst in prevalence of binge drinking, according to the Centers for Disease Control and Prevention. Are these two related? 1st in per
capita gang membership and 10th in violent crime, according to the National Gang Intelligence Center 50th in negative net worth, due mostly to public pension obligations,
according to Richard Ciccarone, chief research officer of McDonnell
Investment Management in Oak Brook. Scary when considering this with my article last week.
Highlights 41st in cardiovascular deaths 46th in high cholesterol 2nd in corn and soybean acreage 1st in federal stimulus spending, according to the Federal Highway Administration 19th in corruption cases per capita, according to Tribune analysis. How did that happen?

Conquering the Cabin Fever Blues By Kris
I don't know about anyone else but I say
enough of winter already, I'm
ready for spring. Sometimes harbingers of warmer weather show up in the
mail box and this past weeks, after trudging up a snow and ice laden
driveway, I found one such "sign of spring" in my mail box. The sign
appeared in the form of an annual plant and seed catalogue. For just
a fleeting instant I could feel the warm breeze of spring only to have
my hopes dashed as I trudged back up the driveway from the mailbox.
Other than a few sensory impaired friends of mine, I am sure that we
are all experiencing the late winter affliction known as "Cabin Fever"
these days. Once again, off to do my research I ask "Ask.com" to tell me about "Cabin Fever" only to find what I already knew "This term is used to
simply say, that you are sick of being cooped up inside, and that you
want to get out." Web MD takes it a step further and declares it a form of depression (S.A.D. to be precise) and lists light therapy,
exercise, deep breathing and massage as forms of therapy. For
those of you who think you may need some of this therapy let me
enlighten you as to why these activities may help and for those of you
who don't really think it's a problem, just watch the movie "The
Shining" to see what cabin fever can do in its
worst-case scenario. Light therapy. Your mood is partly influenced by sunlight, melatonin, serotonin,
and vitamin D. Melatonin, (sleep hormone) decreases when it is light. Serotonin (hormone associated with wakefulness and elevated
mood) increases when it is light. Vitamin D helps the body maintain a levels of serotonin
during the winter.
Exercise. It induces positive changes in our immune system. Physical activity is a
great combatant for
depression.
Hibernation is great for bears, not so much for us humans.
Deep Breathing.
We all know how to breathe, but too many of us breathe
with
short, shallow breaths. Deep breathing calms you down when you've got that
restless,
bored "cabin fever" feeling, while also restoring energy to sluggish
cells. I'm
not sure that I'm into the S.A.D. phase yet, although my family and co workers
may disagree. For me, I think the deep breathing and the exercise go hand in
hand, and I could use a nice massage after basking in the sun. The one
aspect of this remedy that they seem to have left out of this picture
is the Margarita in my hand during the majority of these events. I guess dropping a couple Vitamin D caplets in the Margarita won't hurt either! |

Quality Wines Become Value Wines
by Jimmy
|

The "Great Recession" has turned the wine industry upside down.
Due to a slumping economy, wine producers are needing to lower the cost of their
wines in order to get it out the door. It has definitely become a buyers market
for wine. Many wine merchants are telling everyone to take advantage
of the deals while they last.
For the better part of the past 2 decades, wine prices seemed
to only go in one direction, UP. After years of double digit
growth, wineries are now facing flat or declining sales. It also seems these tough
times have not spared any region across the world. Many wineries are being
forced to drastically reduce their production, inventories and some are being
put up for sale.
One thing that does surprise a lot of people is that Americans
are drinking more wine. For years, people have
been learning more and more about wine and have expanded their knowledge
and palates by buying better quality and spending more per bottle.
But now, people are looking for value. You want a luxury product but you
want it at a value. With the start of the slowing economy in late 2007, more and
more good quality wines were being found under $20.00 retail cost. The
recession has wine drinkers finding value deals for great quality
wines.
Regardless of what the next few years may bring, more and more of
the wines produced do not have to be so expensive to get quality. The consumers
can not afford it nor will they be willing to spend that much for wine. The
wineries are finding the need to adjust to this value demand but still sell
wines they are proud of. It is definitely a wine buyers market and this
will help introduce more and more people to this choice of alcohol beverage.
