sirloinBack in the Red Door days the most consistent seller was the Red Door Sirloin. I was never real sure why it was called a sirloin since they always use a closley trimmed 12 ounce New York Strip. It was simply grilled and served with sauteed onions and mushrooms. The New York strip is my favorite cut of meat. To me it has the best flavor of all steaks, a meatier texture than a filet and much less fat than a ribeye. To keep with the Red Door spirit we will also serve homemade cottage fries, aka Chitty Chips. Just just for the record, my father, the orginator of the Red Door Sirloin is reading our weekly emails.

Alder Plank Great Lakes Whitefish

alderComing from the largest freshwater system in the world, the Great Lakes whitefish is a deep, cold water fish that is wild caught. Most chefs and cooks believe that wild-caught fish offers superior flavor and texture to fish that is farmed. This fish has a long list of health advantages. It has a high content of omega-3 fatty acids, vitamins A, B6, B12 and rich in potassium. It has a sweet, light flavor that many who "don't like fish" can appreciate. We broil it and top it with dill cream sauce. It is served with balsamic glazed brussel sprouts and applewood smoked bacon for $19.75.

The Illinois Smoking Ban Two Year Review

As we are coming up on the second anniversary of the Illinois smoking ban. I saw this article in the Chicago Tribune and thought it might be interesting to share where we stand from a business operator point of view. I realize that this has very little effect on most of you other than being able to go home from a night out without smelling like smoke. The last statistics I saw said less than 25% of the adult population smokes anymore.

The link below will take you to an article that details what some places in Chicago are doing about violating the law and getting around it. I saw this coming 2 years ago. Also, in our area, the same thing is happening and some places overtly place ashtrays on every table.smoke jug

Now I don't want it sound like I am advocating smoking because I am not. Personally I agree with the law, just not how it was implemented. We tightened our smoking policy years before the law went into effect and would have abolished it completely with or without the law. The problem I have is with the way the law was written. It has never had any teeth and to my knowledge it still has not been finished by our legislature. Many of you are familiar with a local case that was thrown out by a judge because apparently the state never made any agency legally in charge of enforcing it. So here we are with another law on the books that you can choose whether or not you are going to obey. I feel it waters down all laws and sends an incorrect message.

I also feel that business owners should have the right to run their businesses the way they feel is best, and that customers should have the right to choose the business they want. As an operator I can tell you that smokers do spend more money. Many times if you have just one person in a group that smokes,  a smoking policy (or lack of enforcing it) determines where the group goes. So an operation that breaks the law has an advantage over one that follows the law, especially in the bar business. I think they need to enforce the law or change it

I don't like to complain about anything unless I can offer a solution. Mine is as follows; Make smoking illegal as it is now. If you want to allow it you should have to declare your place a smoking establishment and apply for a license. Once you declare your business you would then be required to place a specific smoking logo in any advertisement, telephone listing, and web page you are involved in. You would also need to place that logo at your front door.That way potential patrons would  know well in advance of a businesses' status. Fines and punishments would be much easier to enforce and potential employees could choose where they would like to work.

Sandeman 20yr Tawny Port

Tis the season for enjoying dinner and conversation with family and friends. An after dinner drink is a start to a great conversation. There is nothing better than to finish a long day shopping, sipping on port wine. 
 
Port wine is a sweet red wine that is richer, heavier and has a higher alcohol content than most other wine (which in December, you need it!)  We are featuring Sandeman 20 year Tawny port.  Sandeman has been making port wine for over 200 years and was the first company to brand a wooden cask. In 1805, Sandeman started fire branding their trademark GSC on all pipes they sold, thus giving the wine a name that assured quality. At the end of the nineteenth century "brand" names were largely unheard of but Sandeman wanted to give their customers the guarantee of quality. The Sandeman brand was registered as a trademark in 1877 (First Trademark Registrations Act) making it one of the oldest in the world. Aged 20 years, the maturity and complexity of this wine create the perfect conclusion to a meal and the start of a great conversation.

The City of LaSalle and Downtown Business Association are kicking off the month of December by hosting a city wide festival on Saturday, December 5th. To begin the holiday season, festivities will be held all day throughout downtown LaSalle.  There will be numerous activities held in an effort to promote tourism and give visitors various activities to do throughout their day shopping downtown LaSalle. The story behind the Moscow Mule

moscow mule I stumbled upon a story that tells the origin of the moscow mule. I found the story fascinating and wanted to share it with you. The year of creation is still disputed, with some saying it was created after World War II and others arguing that it was created pre World War II. Nonetheless, the creator of the Moscow Mule is not. A man by the name of John G. Martin of Heublein Inc., an east coast spirits and food distributor, is given majority credit for creating the Moscow Mule.
 
The story here is very interesting. I'll give you the short version and those interested can continue reading via the attached links. So it goes, Mr. Martin purchased a large quantity of Smirnoff Vodka at a time when Gin, was by far the dominant spirit of the United States. His purchase, within his industry, became known as "Martin's Folly." In an effort to prove his doubters wrong, Martin took off across the country in an effort tocock n bull market his vodka. His journey brought him through Hollywood where he stopped at a well known restaurant on the sunset strip called the Cock "n" Bull. At the time of his stop, his marketing campaign was not going too well. As "luck" would have it, the owner of the Cock n Bull, Jack Morgan, made ginger beer on the side and his business venture was also not going very well. At the same time, Jack Morgan had a friend who had inherited a copper factory that was struggling to unload........yep you called it, copper mugs. Together the threesome concocted what is now referred to as the Moscow Mule. Being that the drink was created in hollywood and marketed well by Mr. Martin, the drink soon found its way into movies on the big screen thus launching the popularity of the now famous drink.
