Pork Tenderloin Stalkers

Do you have a pork tenderloin fetish? If you do you might
want to check out these two websites. Start with the best pork in the world and
add some small independent diners with great character throughout Iowa and you will
have some really great homemade "porks". I don't think
many people realize this is strictly a Midwestern thing. It is also interesting
to see the different styles of porks represented here. Some appear to be "pounded"
thin and others are more meaty and thicker. Breading varies with bread crumbs,
wet batter to just sautéed.
We could not enter our pork tenderloin into the fray because
we are not obviously in Iowa, but I do feel we would stack up. Our style starts
with a 6 ounce Iowa tenderloin that is not pounded paper thin. We could make it
as big as the plate but we prefer ours a little more meaty. They are breaded
fresh to order using a wet batter then dry batter for some extra crunch. Served

Housemade Biscotti

The word "biscotti" in Italian is the plural form of biscotto, which applies to any type of biscuit (cookie), and originates from the Latin word biscoctus,
meaning "twice-cooked/baked": it defined biscuits baked twice in the
oven, so they could be stored for long periods of time. American biscotti are indeed crisp cookies often containing nuts or flavored with anise. In contrast to the Italian version paired with wine, American
biscotti more frequently accompany Italian-style coffee- and
espresso-based beverages, including cappuccinos and lattes.
We decided to make our own after looking for a long time for a commercial product that we thought was a good quality at an affordable price. You'll be happy we did. We bake the loaf of biscotti, then slice them, rebake them and dip them in chocolate and nuts. The result is twice the size, fresher and better tasting. They are also not as hard as the commercial products that we have had in the past, yet still very dunkable. Try one with your next coffee or cappuccino. Or don't bother dunking, just enjoy it as is. |

What Really Caused That Hangover

Just
recently I was listening to a radio show that made a comment about drinking
vodka because it does not cause a hangover in the morning. I'm not an avid
vodka drinker, so I couldn't confirm this statement without a little
bit of research. It turns out there are a few factors that will cause a
hangover. It is a combination of your alcohol metabolism, dehydration and the
flushing out of vitamins A, B and C due to the chemical reaction of
the alcohol in your system. A hangover is basically a mild overdose of a
depressant drug and because you have flushed so many nutrients and vitamins
from your system, your body struggles to compensate against that.
However,
some drinks will give you less of a hangover than others due to the amount of
congeners within each liquor. Congeners are impurities formed in alcohol during
the fermentation process and there are many of them. They are also responsible
for the taste, color and aromas within each individual liquor. That leads us to
Gin and Vodka (clear liquors) which generally have a lower amount of
congeners than whiskey, bourbon, some rums and scotch because of the
filtering process. But, just because vodka and gin have less congeners than
other liquors does not mean they will not give you a hangover. Drank in
moderation you probably will not feel the effects of a hangover. However,
drinking too much of these liquors or even drinking these liquors with
carbonated beverages (which absorbs the alcohol more quickly than
non-carbonated beverages) you will still feel the effects of a hangover
the next morning.
