It's Fat Tuesday!
 
Today is Fat Tuesday, the day before Ash Wednesday. Most people think that Fat Tuesday is the end of Mardi Gras. In reality Fat Tuesday is Mardi Gras (Literally translate, Mardi Gras is French for Fat Tuesday.) This marks the
end of Carnival and is designated by counting 47 days before Easter. At the Uptown we will be offering several seafood specials on Ash Wednesday and every Friday during the Lent Season, both lunch through dinner. -- Kris

While building a serious wine list you need to be able to store wines in an environment  that can enhance their flavor and not damage it. In the last few years the shipping and storage of wines has been receiving a much greater amount of attention. All the wine merchants we currently purchase from guaranty that their wines have been handled properly and at the correct temperatures. Deep below our 105 year old building, lies our wine cellar. The cellar stores our wines at the ideal 55-60 degrees. In all we have about 80 different wines that we cellar.  - Jimmy

"Tea Menu"

Recently we decided to enhance our tea service by switching to fresh "loose" teas. No more teas bags in foil packages that could have been packed sometime in the 1990s. These are fresh teas, different styles and types from all over the world. We also just added a 20 ounce cast iron tea pot to assist in the staving of the teas. Each pot has stainless steel mesh screen to filter out the loose tea. We also have fillable tea bags for tea to-go.

The flavors that we currently have are
  • Ceylon Tea: Lighter then most black teas. It is a rich and flavorful tea suitable for any time of day.
  • Earl Grey Tea: Flavored with real bergamot oil extracted from the rind of bergamot oranges.
  • English Breakfast Tea:  It gets its "breakfast" namesake from its strong, heavy flavor and dark color. It is also strong enough to take the addition of milk and sugar.  Regular and Decaf
  • Spiced Chai Tea:  A multitude of fine black teas with six different spices to create a true spiced chai for real tea lovers.
  • Sechung Oolong Tea:  Grown in the Southern Mountains of China's Fujian Province, it produces a lively infusion with a very pleasing taste.
  • Jasmine Green Tea   It features 1st grade green tea leaves that are lightly scented with jasmin blossoms to create a very aromatic and flavorful infusion.
  • Japan Sencha Green Tea: Japan Sencha is a popular green tea from Japan.
  • Rooibos Tea : Rooibos contains no caffeine, and provides plenty of health benefits that have made it a very popular alternative to tea in recent years. . Rooibos brews up a naturally sweet, dark red infusion.

Roasted Del Caribe Cheese
 As a somewhat regular section on our newsletter we will try to re-introduce you to items that we might not sell a lot of but we think are excellent choices. As our menu has evolved over 23 years the hardest thing about making a change is deciding what to take off. There were display's of civil disobedience for example when we took the Mexican Club, Shrooms and Turkey Burgers of the menu. We don't like to retire menu items, especially the good ones.
 
Roasted Del Caribe is a very firm, very mild buttery flavored Mexican cheese. It will hold its shape while cooking and can even be cooked on a char grill. We roast the cheese and place on a bed of our housemade salsa, and serve it with a side basket of freshly fried corn tortillas. The Del Caribe cheese is also offered as a great vegetarian fajita selection, or as a combination with the beef, chicken, shrimp or portobello mushroom fajitas. - Ryan

Parmigiano-Reggiano is a hard, fat granular cheese, cooked but not pressed, named after the producing areas of Parma, Reggio Emilia, Modena, Bologna, in Emilia-Romagna, and Mantova, in Lombardy, Italy. Parmigiano is simply the Italian adjective for Parma; the French version, Parmesan, is used in the English language. The term Parmesan is also loosely used as a common term for cheeses imitating true Parmesan cheese, especially outside Europe; within Europe, the Parmesan name is classified as a protected designation of origin. It comes in 20lb wheels and is stamped stating authenticity.
Once you have tried real "Reggiano" no other parmesan taste the same on your pasta. It has a rich, almost nutty flavor. It goes great with our spaghetti bolognaise and or special pastas. It is much harder than most cheeses. In this picture we are using a rubber mallet and sharp chisel to cut it into chunks that fit into a cheese grater that we bring to the table. The rind is too hard to grate so we will generally use it in sauces to give them a little bit of extra richness. It is also very expensive and averages about 5 times the price of regular parmesan.
