Winter is the perfect time of year to cozy up to a steamy bowl of hearty chili or a piping hot cup of savory soup.  It's also a great time to huddle up with friends and family in the kitchen to create comforting fireside snacks like Chef Joseph's very own Southwestern Nachos made with Three Bean Chili.

The gluten free diet has exploded in popularity in recent years as more consumers discover health benefits that can be obtained from such a change in their diet. While a gluten free diet is most commonly recognized as a treatment for celiac disease, a 2008 study by A. Vojdani et al, suggests that gluten sensitivity can affect other organs well beyond the intestinal system including the joints, heart, thyroid, bone and brain cerebellum.  The report also claims that gluten sensitivity has been associated with neurological disorders including: cerebellar ataxia (loss of the ability to coordinate muscle movement), epilepsy, dementia and the "softer" and more common neurologic disorders of chronic headache, developmental delay (autism) and learning disorders or ADHD.
 
More recent research (Kurppa K 2009 et al, Ludvigsson JF 2009) confirms that individuals with latent celiac disease - positive blood test results but no intestinal damage - do benefit from a gluten free diet.  Additionally, with 693 papers published in PubMed, (275 papers on Atypical celiac disease, 239 papers on silent celiac disease and 175 papers on latent celiac disease) there appears to be an abundance of medical research on the topic of how gluten affects human health.  For years consumers have used the gluten free diet as a natural, non-invasive treatment for health issues such as ADHD, behavior issues, gastrointestinal issues, joint and muscle pain, irritable bowel, Crohn's disease, depression, anxiety, Fibromyalgia, and learning problems and it appears that the medical research is now catching up.

Ingredients:
9.25 oz.    FRITOSŪ corn chips (1 retail bag)  
1 bowl      Kettle Cuisine Three Bean Chili (10oz)
               (thawed overnight in the refrigerator)
2 oz.        Yellow Onion, finely diced
3 oz.        Sharp Cheddar Cheese, shredded
3 oz.        Monterey Jack Cheese, shredded

Garnishes (optional):
Sour Cream
Sliced Scallions
Sliced Jalapenos
Hot Sauce
Chopped Cilantro
Lime Wedges 

Method of Preparation:
1. Heat oven to 400°F
2. Arrange an even layer of corn chips in an oven-proof casserole dish
3. Spoon thawed chili evenly over chips (Chili may also be thawed in the microwave- pull back seal and microwave each bowl for 2 minutes)
4. Sprinkle onion over the chili
5. Evenly layer both cheeses over top of the mixture
6. Place in oven and heat until cheese melts and chili is warmed through
7. Remove from oven, top with optional garnishes and serve
