Undiagnosed Celiac Disease can lead to damage to the intestinal villi, malabsorption and nutritional deficiencies. The gluten-free (GF) diet, critical to long-term health and management of celiac disease, can also result in nutritional deficiencies, because GF convenience foods often lack essential nutrients found in wheat-based products.
 
To make sure you are getting the nutrients you need to restore intestinal health and offset any possible nutritional gaps, choose GF whole grains, and enriched or fortified grains and starches whenever possible. A nutritionally complete GF diet also includes nonfat or low fat dairy products, lean meats, a variety of fruits and vegetables, and legumes. The following gluten-free grains offer the right mix of vitamins, minerals and protein to promote intestinal healing and maintain proper health:
 
     Amaranth       High in protein, calcium, iron, magnesium, zinc and fiber
     Buckwheat     A terrific source of fiber, protein, riboflavin and niacin
     Millet              Loaded with B vitamins (particularly folic acid) and fiber
     Quinoa           High in iron, calcium, magnesium, B vitamins and fiber
     Teff                 A great source of protein, calcium, iron, magnesium and zinc
     Oats               Packed with soluble fiber, zinc, B vitamins and protein

RecipeCarrot Coriander Tomatillo Sauce
Approximately 6 servings
 
Ingredients
1 bowl    Kettle Cuisine Organic Carrot and Coriander Soup
¼ cup    Orange Juice (fresh squeezed)
¼ cup    Tomatillos (roasted or canned)
¼ cup    Dark Brown Sugar
1 tsp.     Sherry Vinegar
1 tsp.     Lime Juice (fresh squeezed)
¼ tsp.    Tabasco Sauce
¼ tsp.    Ancho Chile
⅛ tsp.    Cumin (ground)
¼ tsp.    Salt (Kosher)
1 tbsp.   Cilantro Leaves (finely chopped)
 
Preparation
1.  Thaw soup in the refrigerator overnight or defrost in the microwave- pull back seal and microwave for 2 minutes
2.  Heat ingredients in a small metal sauce pan over medium heat
3.  Mix thoroughly, stirring as needed
4.  Bring to a simmer and remove from heat
5.  Cool to room temperature, cover and refrigerate
 
Serving Suggestions
Use as a braising liquid for pork, chicken or shrimp.
Toss with roasted sweet potatoes
Mix with white, brown, wild rice or risotto
Serve over tamales or enchiladas
Use as an accompanying sauce to grilled meats
Mix with pulled pork or chicken

As you read in Martha's feature story, it is critical for individuals on a gluten free diet to include a mix of gluten free grains to avoid negative long term effects of specific nutrient deficiencies.  Therefore, we are excited to sponsor a contest for the most creative and appetizing soup recipe that includes one or more of the following grains: amaranth, buckwheat, millet, quinoa, teff and/or oats.
