Notes from the Cellar
Sometimes a restaurant meal can inspire the home cook -- even second hand. My son was invited to a friend's birthday dinner, and texted from the restaurant: "What is hanger steak"? True foodies will tell you that it's a "chef's cut" -- the one they reserve for the staff dinner. In recent years it has been popping up on steak house menus. Lean and flavorful, but with a nice chewy bite, it's great on the grill with a little olive oil, kosher salt and black pepper, but will also take on a garlicky marinade. A quick call to Henry's butcher department yielded some outstanding steaks for an easy summer dinner. Oh, a great bottle of red rounded out the menu.

the glass and bright on the nose, the 2006 opens with aromatics of dark fruit,
black currant, cassis, clove, and cedar. Layered aromas of plum and cocoa
develop into a rich blend of raspberry jam and ripe berry with a hint of
vanilla. The substantial, well developed tannins are suspended through the

Chang Beer; Thailand Chang is Thailand's best-selling beer, made with the fines malt, hops and deep well water. Discerning beer drinkers will appreciate its deep golden color and full-bodied, citrusy flavors, accented by complex aromas of green apples, vanilla and smoke. It is specially brewed to be refreshing, and compliments the exotic flavors and textures of Thai dishes.
Lagunitas "Pils" Czech-Style Pilsner; California
Golden amber in color with an average amount of head
for a pilsner. It has a very dry, robust flavor for a beer of this type
and almost no sweetness. It has a fair amount of spicy bitterness in
the aftertaste that lingers deliciously. Another great offering from
Lagunitas. Two Brothers Brewing "Domaine DuPage" French Country Ale; Illinois Domaine DuPage is a rural, northern France,
amber colored ale. This well balanced beer is full and sweet up front with caramel, toasty, and fruity characters. As opposed to many
of the sweeter fruit beers on the market, our addition of fresh Maine

without the sweet aftertaste. A mixture of Mutton malts -
pale, crystal, and Munich - are combined with wheat to give this ale its

Variation as well.

Henry's Humidor: Cigar of the Week
Kristoff Matador ($7.45)
Made in the spirit of an elite Cuban cigar,
the Kristoff embodies the taste and richness a true aficionado is
looking for. Packaged in a rough cut cedar box and surrounded by loose
tobacco, the Kristoff has a beautiful pre-embargo feel. With a rich
oily wrapper, pigtail and shaggy foot, the Kristoff tastes as good as

Perfect Pairing Recipe: Grillin' and Chillin'
Salmon on the grill is the perfect topper for some seasonal greens dressed in a wine-friendly paprika-spiked dressing, making this a light, healthy and simple summer supper.
Recipe: Grilled Salmon Salad
Wine: 2007 Calera Pinot Noir; Central Coast, California
Winery Notes: The 2007 Central Coast Pi  not Noir draws us in with aromas of black
cherry, mineral and briar bramble. Flavors of blackberry, licorice
(hints of both red & black), cherry cream, wild herbs and
citronella dance on the palate. The texture is smooth, rich and savory,
with a nice, firm tannin structure, and expresses accents of bright
cherry, berry fruit while awarding us a clean, smooth lively finish. Ingredients:
4-6 oz. pieces salmon, preferably wild caught Extra virgin olive oil
Kosher salt
Freshly cracked black pepper 8 oz. arugula 1-2 large ripe tomatoes, cut into wedges 8 strips applewood smoked bacon 1 medium sweet onion, such as Vidalia, sliced
for the Smoked Paprika Dressing
1/8 cup red wine vinegar 1/8 cup lemon juice 3 tbsp. cup orange juice 1/4 tsp. kosher salt, or to taste 1/4 tsp. freshly cracked black pepper 1/2 tsp. smoked paprika 1/2 tsp. dry mustard 1 large garlic cloves, finely minced 3/4 cup extra virgin olive oil

Directions:
1. Drizzle salmon fillets with olive oil, salt and pepper. Grill over medium heat until firm to the touch, but still moist.
2. Mix together dressing ingredients except the olive oil. Slowly drizzle the olive oil into the base, whisking constantly.
3. Cut bacon into bite-size pieces. Cook bacon in a skillet over medium-low heat until crispy and brown. Drain on a paper towel, leaving a few tablespoons of drippings in the pan.
4. Add onions to the skillet, and cook slowly until caramelized. Return bacon to the pan. Remove from heat and add a few tablespoons of dressing.
5. In a large salad bowl, toss arugula with some of the dressing to
coat lightly. Divide evenly among four plates.
6. Place a piece of salmon over each plate of greens. Top salmon fillets with bacon and onion
mixture. Garnish each serving with tomato
wedges and a drizzle of dressing.
Offer additional dressing on the side, if desired. Serve with crusty bread.
