In March, the Prinsendam sails roundtrip Ft. Lauderdale for 70 days through the Caribbean and the west coast of Africa into the Mediterranean stopping in Spain, Morocco, Italy, Croatia, Montenegro, Egypt, Israel, Turkey and Portugal. Shorter segments are available.

Four Simple Tips for better Travel Photos:

1. Remember the rule of thirds.  Professional photographers rarely Tip 1position their subject in the center of the frame.  Instead, they rely on the rule of thirds.  Imagine your photo is divided into thirds both vertically and horizontally, and place your subject along these lines.

tip 2 2.  Come Closer.  Move in closer.  Use your zoom-and your feet- until your subject fills the frame.  For extra dimension and interest, crouch low or shoot from above.


3.  Don't strike a pose.  This goes for both you and any locals you may shoot.  Portraits can be more interestingtip 3 when the subject is actively engaged in something-whether it's weaving baskets or just enjoying a hearty laugh.

4.  Beware of sunny skies.  Ever wonder why the blue skies in your photos end up looking white?  It's because your camera's sensors are more sensitive to UV light than your eyes.  Snap some shots on an overcast day-better yet, at dawn or dusk.  The so-called "magic hour" turns even the most amateur photographers into pros.

A live report from The Wizarding World of Harry Potter.  On November 5th my family and I visited this popular new theme park.  This signature attraction is Harry Potter and the Forbidden Journey, a twisting, tilting dark ride through and around Hogwarts Castle.

 
Hogwarts Castle As you walk up, you really feel like you are approaching Hogwarts Castle.  The ride and show elements deliver several of the most dynamic, iconic moments from the Harry Potter series while placing you into the action.  The stores of Hogsmeade are an attraction themselves...there is much to see inside these stores!

Visit the Owl Post to send postcards (postmarked from Hogsmeade!) to envious friends.  Also visit Ollivanders wand shop ... a must.  It's not just a store; it is an experience.  The wandkeeper allows about 25 people into his store and then selects one person for his wand demonstration.

The shops are surprisingly small, so you should expect a line to get inside.  Be sure to sample (non-alcoholic) Butterbeer, a favorite of Harry, Ron and Hermione.  It is sweet and delicious and tastes a bit like a creamsicle with a hint of butterscotch.  Try it from the tap or frozen; both are equally delightful!

Staying onsite at one of Universal Orlando's three hotels will allow you early entry to the theme park.

For The Foodie

Holland America's Bread Pudding (modified for quantity)
bread pudding
2 cups whole milk (or 2 cups half & half)
1/4 cup butter
2/3 cup brown sugar (light or dark)
3 eggs
2 teaspoons cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
3 cups day-old bread, torn into small pieces (french bread works best)
1/2 cup raisins (optional)
 
In a medium saucepan, over medium heat, heat milk (or half & half) just until film forms over top. Combine butter and milk, stirring until butter is melted. Cool to lukewarm.
 
Combine sugar, eggs, cinnamon, nutmeg and vanilla. Beat with an electric mixer at medium speed for 1 minute. Slowly add milk mixture.
 
Place bread in a lightly greased 1 1/2 quart casserole.
 
Sprinkle with raisins if desired. Pour batter on top of bread.
 
Bake at 350 degrees for 45 - 50 minutes or until set. Serve warm.
 
Try a rum or bourbon sauce on top for an added treat!
