A New Deluxe Hotel
While a cruise ship is a great way to see the many varieties of wildlife in the Galapagos Islands, up to now it has been the only way. No longer! The five star Royal Palm Hotel has now opened on the island of Santa Cruz. Part of Leading Small Hotels, it is a short flight from Quito to this lush setting of gardens, ferns and forest on 500 acres.
All rooms and suites have private verandas/terraces, are constructed of local materials, and decorated with handcrafted furnishings. Exclusive accommodations are spacious and are designed to compliment this natural paradise. Also, a 4-bedroom villa with a private pool is perfect for families.
The hotel helps plan your days of exploring the islands and viewing the friendly creatures in their natural habitat. You are welcomed home to luxuriate by the pool, enjoy the restaurants and bars, relax on your terrace, or by the fireplace. Awaken refreshed and ready to greet another day with the blue-footed boobies and the sea lions! |
ATM's are a great way to get local currency when you are traveling. Just be sure to follow some basic safety tips!
-Be sure to protect your PIN, don't write it down; block people from looking over your shoulder when you enter your PIN.
-Don't accept help from strangers who approach you if an ATM is giving you trouble, even if they claim to be officials.
-Report loss of your ATM card immediately. |

Butterbeer
No need to travel to Hogsmeade (or Universal Orlando) to get a taste of Harry Potter's butterbeer. Universal isn't giving out its recipe, but we found a version of the formerly fictional drink made famous by the young wizard.
- 1 cup light or dark brown sugar
2 tablespoons water
- 6 tablespoons butter
- 1/2 teaspoon salt
- 1/2 teaspoon cider vinegar
- 3/4 cup heavy cream, divided
- 1/2 teaspoon rum extract
- Four 12-ounce bottles cream soda
In a small saucepan over medium heat, combine the brown sugar and water. Bring to a gentle boil and cook, stirring often, until the mixture reads 240F on a candy thermometer. Stir in the butter, salt, vinegar and 1/4 heavy cream. Set aside to cool to room temperature. Once the mixture has cooled, stir in the rum extract.
In a medium bowl, combine 2 tablespoons of the brown sugar mixture and the remaining 1/2 cup of heavy cream. Use an electric mixer to beat until just thickened, but not completely whipped, about 2 to 3 minutes.
To serve, divide the brown sugar mixture between 4 tall glasses (about 1/4 cup for each glass). Add 1/4 cup of cream soda to each glass, then stir to combine. Fill each glass nearly to the top with additional cream soda, then spoon the whipped topping over each.
