| Greetings All! It has been a while since my last newsletter. I hope these fall greetings find you well and having enjoyed your summer! Thanks to many of you who sent wishes, cards, messages and prayers during the birth of our daughter. It has been a summer of change, growth and integration as a family of 4.
This time has also brought an opportunity to create new ideas, classes and ways to be of service to YOU! I hope you will enjoy this beginning and provide me with your questions, comments and suggestions for how I can serve you better in the coming months and into 2009.

Sweetness Without Sugar Classes and Cookbooklet Update
Many of you have asked me about my upcoming cook-booklet including healthy snacks and desserts. I'm happy to report it is coming along and will be available soon. With more news about the dangers of artificial sweeteners as well as sugar and corn syrup, it will be a pleasure to offer this to you, your friends, colleagues and loved ones. The recipes included all contain alternative sweeteners and take into account balancing blood sugar, prevention of and embracing Diabetes, as well as food sensitivities and allergies! With Halloween and holiday season coming up, learn some ideas for healthy treats and new ideas for creating a healthier holiday for you, your family and neighbors! Please stay tuned for more.

Butternut Squash Soup with Ginger
This recipe is adapted from multiple sources and is yummy! It is easy to make and keeps well if you make it ahead of time for your week ahead. Serve with a salad and voila!
2 onions, chopped
2 Tbsp fresh ginger, minced
1 Tbsp coconut or olive oil
2 apples, peeled, seeded and chopped
1 butternut squash, without skin or seeds, cut into cubes*
4 cups vegetable broth
Salt and pepper, to taste
Garnish if desired
* Can slice the squash into 2 long halves and bake it face down on a cookie sheet at 350 degrees F for 45 minutes to an hour (depending upon the size of the squash). Once cooked, scoop out the seeds and add the squash without the skin to the cooked apples and broth right before blending.
Saute onions and ginger in oil, until onions are translucent.
Cook the apples and squash (unless baking as noted) in a pot with the broth.
Boil this mixture first and then simmer until both apples and squash are tender to a fork touching them.
Puree all ingredients in a blender (including the juice from the boiling pot) until smooth. Add garnish as desired.
Serves: 4 Preparation and Cooking Time: 30-40 minutes
If Baking, the squash may take up to 1 hour
