Orders For This Week

Well the only thing that happened unexpectedly this week for our Online Market orders was Signal Mountain Farm had an overabundance of Green Beans so we switched up the orders a bit: BOTH $20 and $30 Farmer's Picks got Beans and we moved the Sweet Peppers to the $30 orders. We hope you enjoy the improved variety! Will loves to use his crock pot at this time of year, he puts a Beef Roast on in the morning and can get a few dishes out of one cut. Check out his two favorite recipes this week: Beef Burritos and Pasta with Beef Ragu.   

 

We are excited to carry Atlanta Fresh's new line of Salad Dressings and Dips: Classic Ranch; Chipotle Lime; and Cucumber Dill. They are all made with their fantastic Greek Style Yogurt which is made from Johnston Dairy Farm's milk. Thank you so much to all of our Members who helped us sell out of our first order this week, we'll have more back in stock for next week's ordering!  

    

We still have a few spots left for our Tomato Canning Class this Saturday! We're going to have a fun group this time so come on out to the Farm for a delicious day of all things Tomatoes, enjoy lunch with us and take a pint home. Weekly Recipes: Crock Pot Beef Roast Dishes 
Will is famous for his Beef Roasts and in the Summer the crock pot is the way to go with them. We hope you will try and enjoy them! For both recipes start with a crock-pot braised Beef Roast. We used one order of the Oxtail/Beef Shanks here to make both dishes but almost any Beef Roast cut will be great.

To prepare Braised Beef: In a skillet brown one chopped Onion and two chopped Peppers, place in crock pot. In the same skillet add 2T Olive or Vegetable Oil and sear the Beef Roast on all sides, place in crock pot. Deglaze skillet (still with the vegetable/beef browned bits and juices) with 1 can of Crushed Tomatoes. Add this to the crock pot. Cover Beef with liquid of your choice (red wine, beef stock, mushroom stock, water, etc.) and simmer on medium-low until very tender.

Beef Burritos 
Remove bones, excess fat (grass-fed Beef fat is not the same as grain-fed, keep some in there!) etc., and combine Braised Beef with chopped Onions, Tomatoes, Peppers, 1 can of Sweet Corn, 1 can Black Beans, 1 can Pinto or Northern Beans and 1 cup cooked Rice. Spoon into flour or corn tortillas, roll up and place in a baking dish. Top with shredded cheese, cover and bake for 30-40 minutes at 350 degrees. Serve with some fresh salsa and avocado, yum  
 

















Pasta with Beef Ragu
 
Remove bones, excess fat (grass-fed Beef fat is not the same as grain-fed, keep some in there!) etc., and combine Braised Beef with chopped Onions, Tomatoes, Peppers, Zucchini, 1 can Crushed Tomatoes and 1 cup Red Wine (or other liquid). Simmer in crock pot or stove top for 1-2 hours and combine with prepared Pasta of your choice. Add grated Parmesan from Yellow Moon Cheese Company and stand back, you might get your fingertips nipped! ; )
