Orders This Week! 

Alrighty-then, we had two shortages this week from our farmers: Signal Mountain Farm did not have as much Celery from their last cutting as they had estimated and we found out about it too late to make a substitution for our $30 Farmer's Pick orders (Custom Choice orders will get their Celery!). If you had a $30 box this week we will set up a credit for your account that will apply automatically when you checkout next time and sorry about the no Celery!  

4G Farms expected to have one last big picking of Okra but, well, apparently that didn't happen. We hate it when things don't go the way we plan but, well, that's the way it goes sometimes with fresh produce. Thankfully there was no shortage on the BACON! ; )

Weekly Recipe
Make Ahead Sweet Potato "Fries"
It's nice to have a batch of these made up to re-heat in the oven to go with a sandwich or burger in the summer. We prepare things like this at night when it's cooler so we don't have to heat up the Farmhouse kitchen! 
 
1. Wash, trim and cut Sweet Potatoes into fries: Will likes his thicker but I like mine thinner, try them both ways! 
2. Place Sweet Potatoes in a bowl and drizzle with just enough Olive Oil to coat.  
3. Place on a lined baking sheet and roast at 400 degrees for 15-20 minutes or until they start to get browned.  
3. Serve immediately or if you want to make a big batch to put some up for later: 
  Cool well in the baking sheet in the refrigerator. Place in a sealed container until you want to enjoy. Then re-heat on a baking sheet until hot and crispy again! We have even frozen them on the baling sheet after they are well cooled, place in a container or zip bag to re-heat again later.

Healing Vibes for Travis!

Some of you have met our delivery fellow, Travis Pate. He is our right arm around here and helps to keep us from going nuts most of the time! Last week he suffered an injury on his own farm and as a result will be off of work for up to several weeks. Help us out by keeping him in your prayers, sending healing thoughts his way or otherwise hoping for his quick recovery! We miss him VERY MUCH and can't wait for him to be back on his feet. Get well soon, Travis!!
