Apologies for the delayed Newsletter this week, our Fabulous Farm Dog Buddy got into a tussle with a snake and had to go to the vet for treatment! He is doing great today and will be home this afternoon. Whew! We love our Buddy-boy, hopefully now he will stay out of the neighbor's Kudzu patch. . .  

 

Wonderful rains this week for all of our farms in the region, North South East and West. We were just starting to really feel like we needed it so it was just in time. Crop reports from everyone so far for the coming Summer months are just right: Peaches, Blueberries, Tomatoes, Sweet Corn, all the big favorites and so many more are growing great. A big Welcome this week to our new Community Box Program group in the Mt Laurel Community, glad to have ya'll on board! We were happy to get our first delivery from Thomas O'Neal at Signal Mountain Farm: he is our Northernmost grower right over the line from Georgia in Tennessee and he helps make our range of harvests last all year. That's the key to a diverse Local/Regional Food System: we take advantage of our climate zones for year-round production of a terrific array of food from our Foodshed! If you have never enjoyed a Red Turnip before (variety Scarlet Queen) or seen a Watermelon Radish like the ones Gary Weil from Red Root Herb and Vegetable Farm brought us this week you may be a bit intimidated. . .no worries, use these roots just about any way you would a Carrot! They are great shredded up for Slaw or to top a salad, steam or stir fry them or chop and add to your favorite soup or casserole dish.

Weekly Recipe
Farmhouse Stir Fry 
Trim, wash and chop your veggies:
~ Pac Choi (white and green parts) 
~ Baby Onions (white and green parts) 
~ Red Turnip or Watermelon Radish (great sliced into matchsticks)  
 
~ Snow Peas (use whole or slice in half diagonally after stringing)
~ Any other veggies you like such as Green Peppers, Carrots, Celery, etc.

Prepare your sauce, mix together: 2T Soy Sauce, 2T Fish Sauce, 1T Hot Sauce or Siracha, 2T Honey (or 1T Sugar), 1 teaspoon each powdered or ground Ginger, Garlic, Cumin, Fennel Seed, Galangal, Red Pepper, etc. whatever you have. (other great ingredients are Coconut Milk, Chunky Peanut Butter, Mushrooms, etc!)

Drain and cut Tofu into cubes, fry in 2T Vegetable or Peanut Oil until crispy (or use Chicken, Pork, Shrimp, Beef). Set aside and stir fry the veggies in 2T Vegetable or Peanut Oil, when they are just getting tender add the Tofu to the wok or skillet and sauce, stir to combine and serve with prepared Rice or Noodles and Orange Slices.

"My Dad found an Eastern Box Turtle. They eat plants and bugs. We can tell this turtle is a boy because the bottom of the shell is concave. After I looked at him for a while I let him go."

We had several cool boxes come back this week with drawings from our Members and their families: we love this expression of creativity and we send the boxes back out for everyone to enjoy. Thank you so much to Anna Fraser for her beautiful artwork on this box. Decorate your boxes before returning to your Pickup Location for us to re-use for another box full of our Good Food!
