  Tra-la-la-la we have been too, too happy with the gorgeous Spring weather, everything is jump jump jumping including our spirits. We have been busy planting weeding, picking and packing orders and looking forward to the weekend. We had one disappointment this week: the Certified USDA Organic Bell Peppers from Florida missed the truck (or at least were too late for us to get them). If you ordered these we'll replace them in your next order automatically!

Celery II
We had several Members respond to our "Celebrating Celery" article with their favorite recipes for this much under-appreciated vegetable. Thank you so much, we love to hear about how you prepare our good local food!

Alton Brown has an amazing celery recipe. It's really simple and tastes great:

It uses a bit of beef stock, but in the comments section below the recipe, various folks talk about using chicken or vegetable stock.

The other fav. of mine is Waldorf salad: even amounts of celery and apples (with red peels for eye appeal) chopped about 1/2 inch size or a little bigger, add about 25% of pecans and 10% raisins. Toss with lemon juice (depends on the tartness of the apples) and light mayo or sour cream. Add a little honey if you want it on the slightly sweet side. Let sit in frig for at least an hour. Good for a couple of days. The raisins will plump up, so don't add to many.

Member Evan Brennan sent us a Cream of Celery soup suggestion but invited us over to try it and didn't sent the actual recipe (thanks, Evan!!!). While we look forward to enjoying his version soon, here is a link we found to a recipe that comes pretty close to a bowl of Creamy Celery Soup we had when we traveled to France a few years ago, sigh!. . . Moore Farms and Friends Spring Farm Day

Saturday, April 28th 2012 

Noon - 4pm Eastern time 

Come on out to the Farm for a beautiful day of fun and food. We'll tour the place to see what's going on in the field, check out the new Baby Chicks and enjoy a delicious Farm Lunch. This is a Members-only family event, $20 per adult with kids 12 and under free (remember, Investment Members are two-for-one!). We are about 90 miles from Atlanta and the farm address to map us is: 239 County Road 561 Woodland AL 36280. Reservations are required as we expect a crowd. Please add a ticket to your order for the total number of adults attending and note in the Comments for the number of 12 and under kids. Come on over!  

We are very proud to bring our farmer's foods to your family and we  always want to know what you think about what we do. Send us your recipes, pictures and stories and thank you for your support!

We hear from you all how much you enjoy our Farm Photos so we are going to try to get one in each week! Here is a lovely scene, our Farm Manager Garver Akers raking a newly tilled row in the field preparing to plant.
Citrus Beet Salad
 Will was not exactly a Beet lover when we first met almost 20 years ago! In fact he really did not care for them at all. Of course like most folks all he had ever been presented with was the basic canned pickled Beets, he had never had fresh ones. Well, all these years later he is definitely a convert and he loves to make this salad with them!

For dressing lend together:

      Juice from 1 Orange  

      1 Tablespoon Honey
      1 Tablespoon Rice Wine Vinegar (or other light vinegar)
      1/3 cup Yogurt or Mayonnaise
      1 teaspoon Poppy Seeds (we have also used Sesame Seeds and they are terrific!)
      salt and pepper to taste  

 

For the Salad:

Wash,  scrub and trim 3-4 Beets. No need to peel unless you must, that's where all the vitamins are! Cut into bite-sized cubes (2 cups for 4 servings) and steam until tender. Allow to cool, then chill. 

Wash and chop Beet Greens finely.  

Wash and prepare 1 head of Lettuce.  

Wash, trim and finely chop 2-3 Green Onions, green and white parts.

Chop into bite-sized chunks or segment 1 Orange. 

  

In a big bowl toss Beet Greens, Lettuce, Green Onions together. Arrange on serving platter or individual plates. 

 

Spoon chilled steamed Beets onto Salad. Mix Orange segments with dressing. Spoon over all of salad and serve immediately.
