Moore Farms
Orders This Week

Well, the only funny thing this week was we got Certified USDA Organic Roma Tomatoes instead of Grape Tomatoes! It was too late by the time we realized there was a mis-communication so we have Romas for the Farmer Pick boxes (Custom Orders still got Grape Termaters, we did get a couple of cases in for you!). These Tomatoes are really best for cooking with: while we enjoy them fresh on salads, etc. we primarily will roast these early Romas or otherwise use them in recipes (see the one for Grilled Bruschetta below!).

Celebrating Celery

Will and I had a ball this past weekend with two fun cooking classes (Metro West and Cook's Warehouse Decatur) and a presentation for All Saints' Episcopal Adult Sunday School class (where we previewed our new Moore Farms video - we'll have our official debut showing for the Spring Farm Day and we'll post it on the website afterward). A great question from a Member was about the Certified USDA Organic Celery in our boxes lately: what to do with it when you get two or three in the crisper drawer?? We have mentioned this in previous Newsletters but wanted to reiterate for newbies or those of you who might have missed it. Soooo, Organic Celery is actually very special! Of all of the vegetables we should prioritize as far as Organic v.s. Conventional, Celery, which is mostly water, is one of the BIG ones. Conventionally grown Celery is just full of petroleum-based chemical fertilizers, pesticides and fungicides. We only get the Good Organic Celery from our Florida growers in the Spring and Fall so we stock up on it here at the farm! Just like Peppers and Onions, when we have a good supply of aromatics that are so versatile in our cooking we (1) wash, (2) chop and (3) sautee them in a little Olive Oil salt and pepper and (4) freeze in 1/2 cup portions for soups, stews, sauces, casseroles, just about anything you want the yummy Celery flavor for. We hope this inspires you! There really is only so much crudite and "Ants on a Log" we can eat but we won't have the Celery for long so put some up for later! ; )

We're glad to offer our Spring Investment Membership Special again (see details below) with a terrific incentive to pre-pay for your orders and gain a tasty return on your Investment. (Investment Members enjoy 2-for-1 prices on Farm Events like our Spring Farm Day!) You can purchase an Investment Membership even when the rest of our Online Market is closed for the week.

Vidahlia's Farm Report
Viddy's drawing of the Pea Rows
The latest installment from the 6-year-old daughter of our Farm Manager as she shares her experiences about life here at Moore Farms. . .

"On March 8th we planted peas. 10 rows were sown. They will take about 60 days to grow. I can't wait to pick them. Peas taste so good!

See you next time,
Vidahlia"
Roma Tomato Recipe
Grilled Bruschetta
We made this for the Metro West Grilling event last weekend with the Grape Tomatoes and then again this week for lunch with the Romas: deeelish and super easy. Try these if you are going to fire up the grill this week to enjoy the 80 degree "Spring" temps!

Wash, slice in half and trim the stem from 3-4 Roma Tomatoes.

Wash and trim 4-6 Green Onions (leave root ends on for now).

Place Roma Tomatoes skin side down on medium hot grill. Lay whole Green Onions on grill. Roast for 5-10 minutes or until just charred and starting to get tender, turn once.

Place Tomatoes and Onions on a cutting board and allow to cool.

Toast 4-5 large slices of Ciabatta bread (or use another crusty-type loaf) on the grill, turn to toast on both sides.

Trim root ends off of Green Onions, chop all of the rest of the Onions (Green and White parts) and place in a mixing bowl. Chop Tomatoes into 1/2" chunks, add juice and all to the Onions. Season with salt and pepper, drizzle with Olive Oil and mix/mash well to combine*. Spread on Toasted bread, slice into appetizer servings, serve immediately grill-side!

*Roasted Garlic is fantastic in this too!
