Our Red Stemmed Pussy Willows have just started to emerge: if you ordered these this week you can re-cut the stems and place in warm water. They will continue to "bloom". Then just take them out of the water when they get to the size you want them to stay (they dry beautifully!).

growers came through the little freeze this week just fine! We always have uneasy nights when we dip below 30 especially for our greenhouse and hoophouse folks. Newell Farms reported some damage to hoophouse from the winds Monday night but otherwise looks good for now. We hope not to have a repeat of last year's Winter Storm! That was the first time ever we had to cancel orders, not a fun time for any of us. I just came in from checking the chicken houses here at Moore Farms, the deep hay bedding and lights at night have kept the girl's waterers from freezing and they are all out in the yard now enjoying the sunshine and taking dust baths! Our Fall chicks are growing so fast, they will start to lay for us in another month or so. We will have a larger home-brooded batch of chicks this Spring and will plan for them to hatch right before our Spring Farm Day.
We only had one shortage this week: we did not get all of the Certified USDA Organic Celery we had ordered. They did send enough for Custom Choice Orders and the Dinner Packages but $30 Farmers Pick boxes got Pac Choi or Red Stemmed Turnips as replacements. Should have more next week, the Celery season has just started and we are so lucky to have this regionally produced staple for our Winter meals!

Popcorn on the Cob

| Beech Creek Farms grows our Popcorn from us and we are so happy to have it! The flavor of fresh Popcorn is really different from the packaged corn you buy in the store: and ours is still in Mother Nature's package! Here's how to enjoy your Popcorn:
1. You can pop it on the cob if you use a microwave. Place the whole cob in the paper bag we sent it in and microwave on high until the popping rate slows (like the packaged bag popcorn directions).
2. We recommend removing the kernels and popping the old-fashioned way in a covered pot on the stove. The kernels are easy to remove (see above) with your thumbs, do this over a bowl so they don't get away from you. Put 2teaspoons oil in a large pot, heat on medium high heat on the stove and add kernels (when the pot is heated). Cover and shake/agitate the pot to keep the kernels moving so they don't burn. You'll get most all of the kernels to pop if you are using fresh Popcorn.
Hints: We add some salt to the oil before popping and you can flavor with seasoned salt, paprika, cumin, etc. immediately after the corn has finished popping. Also if you don't use your Popcorn right away store it in the paper bag in the fridge or freezer.
