We're all done with deliveries now for the rest of the year and ready for our holiday break. The week between the First Day of Winter and New Year's is the only time we take off each year so we look forward to it. We would love to be doing our crop planning on a sunny beach somewhere but alas, it was not in the cards this year! Will and I are working on the Farmhouse renovations in-between family and friend celebrations. We hope to have the rejuvenated kitchen ready for 2012 so we can expand our on-farm cooking and canning classes and farm dinners, yay! **Our Online Market will be closed until Thursday December 29th when we re-open to place orders for deliveries on January 4th, 5th and 6th.    

 

However you wish to celebrate the season, we wish all of our Members a Happy Hannukah, Merry Christmas, Good Kwanzaa, Joyful Solstice and a very, very Happy New Year!

Wonderful Winter Greens

Winter Greens are a fast and delicious way of providing your family with much needed nutrients during the darkest time of the year. Since Winter Greens develop their best flavor after the first frost, this is the perfect time to let Will and Laurie Moore of Moore Farms show you how to bring out the best in this wintertime staple. We'll prepare Stuffed Collard Greens (both with meat and vegetarian), Kale Salad, Mixed Greens Casserole and Cheesy Mac and Greens. Everything will be coming up green once you add these great recipes to your winter arsenal.

Elegant Vegetarian Dinner Party 

Laurie and Will Moore will display their gift for creating deceptive delicious dishes, even for die-hard carnivores. Watch and learn as they show you how to prepare this elegant menu, sans meat: Savory Spinach and Goat Cheese Bites, Spring Greens with Dill Vinaigrette, Roasted Root Soup, Homemade Pasta Primavera and Apple Tart with Frozen Yogurt. This is one of the most requested class topics, so don't be left on the waiting list!

Root Vegetable Gratin 
Another favorite way to enjoy our Mixed Roots, we were reminded of this one by our good friend Cathy Conway at Avalon Catering. She made this for the Field of Greens Festival this year, yum!

Wash, trim and thinly slice a variety of Root Vegetables (different colors are really cool). You want 2 cups for the dish.

Grate 1 cup Cheese of your choice (we like a mix of Peppered Gouda and Red Hill Cheddar but any kind will be great).

Butter the bottom of a 9"x9" glass baking dish. Arrange one layer of Root slices, sprinkle with cheese, salt and pepper. Continue until dish is full. Dot top with Butter and pour 1/2 cup Heavy Cream (we know!) over all.

Cover with lid or foil, bake at 350 degrees for 45 minutes or until tender. Allow to rest before cutting and serving, makes a terrific side dish or brunch offering and everyone will LOVE the Turnips and Rutabagas!
