Alright, everyone is back in the saddle so to speak, well rested and fed after a nice Thanksgiving Break. We ended up with two inches of rain this week and thankfully only a smattering of snow. We are bracing for the frigid drop in tonight's temperatures and we have everything and everyone wrapped up and ready for the dip. All looks great for harvests in the coming weeks as we have several farms with unheated Hoophouses or Greenhouses and the South Alabama/Georgia and Florida growers will be starting their deliveries soon. Thank you to all of our wonderful Members as we get ready for the rest of the Holiday season and year-end, we can't do what we do without you!

We just had to show off one of our favorite Thanksgiving Leftover recipes, Turkey Pot Pie. Check out the super easy recipe!
Florence Fennel 
Florence Fennel
Fennel doesn't get the attention it deserves here in the states! In Mediterranean countries it is a very popular vegetable. Fennel can be enjoyed raw or cooked and is wonderful in pasta dishes, soups, etc. If you are not familiar with this lovely delicate vegetable try this salad. If you're already a fan send us your favorite recipes!


Fennel and Apple Salad
Wash and trim Salad Greens of your choice, Florence Fennel (1 for 2 people, 2 for 4 people), Apples (also 1 for 2 people, etc.) and three Green Onions.

Arrange Salad Greens in serving bowl.

Wash, trim and slice into thin slivers the bulb end of Florence Fennel. Finely chop a few of the fern-like frond ends for the salad.

Slice 1-2 Apples thinly, chop both white and green parts of the Green Onions.

Mix Fennel, fronds, Apple and Onions in a bowl. Add Vinaigrette and toss. Scoop onto the Salad Greens, toss and serve.

*The only part of the Florence Fennel that is a little tough to eat raw is the stem: save these for soup stock or finely chop and use for cooked dishes.
