Mardi Gras Lafayette

Celebrate
Mardi Gras with parades and special events. Le Festival de Mardi Gras à
Lafayette, held Mardi Gras weekend, features rides and games on the
carnival midway, live bands on the sound stage, and a prime spot for
parade viewing. The parades also roll through downtown Lafayette, where
you can participate in a costume contest and dance in the streets to
live Cajun and Zydeco music Mardi Gras day. Bring your RV and park at the Cajun Dome, see link below for more information.

Recipe of the Month - for Mardi Gras
Madi Gras menu from our friends at Healthy Living
Here's a snack for the Mardi Gras party. Travels well in the RV too.
Purple, Red & Green Trifecta
Makes 12 servings, 1/4 cup each
ACTIVE TIME: 15 minutes
TOTAL TIME: 50 minutes
EASE OF PREPARATION: Easy
2 tablespoons extra-virgin olive oil
2 medium onions, chopped
6 red, yellow and/or orange bell peppers, seeded and cut into 2-inch
slivers
1 teaspoon dried oregano
1/4 teaspoon salt, or to taste
Freshly ground pepper to taste
Heat
oil in a large nonstick skillet over medium heat. Add onions and cook,
stirring often, until softened, 3 to 5 minutes. Add peppers; cook,
stirring occasionally, until softened, 7 to 10 minutes. Stir in
oregano, salt and pepper; cover. Cook, stirring occasionally and
adjusting the heat as necessary so the mixture doesn't burn, until the
peppers are very tender, 15 to 20 minutes.
Serve warm or at room
temperature atop of your favorite cracker or crostini
MAKE AHEAD TIP: Cover and
refrigerate for up to 4 days.
If your thirsty
Kiwis add a tropical note to the Southern favorite.
Makes 2 servings
EASE OF PREPARATION: Easy
3 tablespoons sugar
1/2 cup hot water
2 cups ice
3 kiwis, peeled
2 tablespoons frozen limeade
2 tablespoons. chopped mint
3 ounces bourbon (optional)
1. Dissolve sugar in hot water in a 1-cup measure; let cool slightly.
2. Combine ice, kiwis, limeade, mint, the sugar mixture and bourbon, if
using, in a blender; blend until smooth.
