Hopefully you all have heard by now that we have once again started a series of cooking classes for the summer and fall, "Save the Third for Chef Irv." On the third Wednesday of each month, now through November, Chef Irv will present classes that will cover everything from shopping to preparation to presentation. Each class begins promptly at 5:00 p.m., ends at 6:30 p.m., and costs $40 per person, which covers the cooking demonstration, tastings of the prepared dishes, wine pairings, and a take-home recipe booklet so you can try your hand at Miller's recipes in the comfort of your own home. Advanced reservations are required, so be sure to make yours by calling the restaurant at (850) 469-9898 or call me at (850) 217-2347. The first of these classes, Cooking with Fresh Herbs, debuts this month--Wednesday, July 15, at 5 p.m. Click here for detailed information for each class.

What's in season for July? Sweet Basil Snippet If you were inspired to grow basil this spring, your plants should really be flourishing by now. Late June is an excellent time to harvest most of the newest growth. Remember, when harvesting, to trim just under the sprig and between the leaves. If you look closely you will notice tiny new leaves. They will be the next growth for the upcoming summer months. Avoid trimming under the leaves and leaving a stub.
Since you may not need all the harvested basil, share it with friends and family. An excellent way to use basil is steeping the leaves in high-quality vinegar and then storing the flavored vinegar for salad dressings. August 15, 2009--Save the Date 450th Anniversary Celebration
The Great Southern Restaurant Group and Jackson's Steakhouse are proud to team up with Celebrate Pensacola, commemorating Pensacola's 450th anniversary.
The culmination of the festivities is Saturday, August 15, with a daylong celebration of events including the following:
7:30 p.m. Pensacola's 450th Birthday Bash on Plaza Ferdinand: Downtown Pensacola Street Party featuring bands, special events, fireworks, and the Pensacola Celebrity Chefs, including our very own Chef Irv Miller, all just outside Jackson's front door.
7:30-10:30 p.m. Jackson's VIP Party: A final fund-raiser for Celebrate Pensacola, proceeds go toward the grand celebration, keeping the event free for the public.
