The Boulder Farmers'Market opened in a big way!
Thank you! The Boulder fresh food aficionados came back to the market with enthusiasm. It is hard to be a seasonal, local only market on the Colorado Front Range, this year everything is going well. We bring as much spring greens as possible to the first market hoping the customers haven't forgotten the benefits of real fresh food. You came back with exuberance, thank you. It was great to see so many of our neighbors looking over our new farmers at the market, tasting and discussing the wonderful new flavors.
Don't let a little cold weather this week get you down. The Spring sun is scheduled to shine at our Boulder Farmers' Market again on Saturday April 12.

Depressing...
One of world's most troublesome weeds is now herbicide-resistant
It is called Johnsongrass , and it has become resistant to the herbicide glyphosate (Roundup) at sites in Arkansas and Mississippi. Johnsongrass is the latest in a string of resistant weeds that calls into question the widespread use of genetically engineered herbicide-tolerant crops. This year, U.S. farmers will apply glyphosate to more than 100 million acres of soybeans, corn, and cotton engineered to tolerate the herbicide. These and other genetically modified crops were sold with the promise of decreased pesticide use, but the overuse of any one herbicide almost inevitably leads to resistant weeds like the newly discovered johnsongrass. Culinary School of the Rockies reports that opening day at the Boulder County Farmers' Market was a smashing success. Customer turnout was so fabulous that their recipes and pesto samples were snatched up fast. Visit them this Saturday and sample a European favorite - Radish Butter with Lemon and Parsley.

Recipe: Arugula Pesto
Ingredients:
2 cups packed arugula leaves ½ cup walnuts ½ cup fresh grated parmesan cheese ½ cup extra virgin olive oil 5 cloves garlic
Method:
- Brown garlic with skins on in a skillet over medium high heat until lightly browned, about 10 minutes. Remove garlic from pan, cool and remove skins.
- Lightly toast the walnuts in a pan over medium heat.
- Combine the arugula, walnuts, roasted garlic in a food processor. Pulse while drizzling olive oil into the processor.
- Scrape mixture into a bowl then stir in the parmesan cheese.
- Mix pesto with freshly prepared pasta of your choice or serve with crackers, bread or crostini alone or with goat cheese.
