Set in a 1920s art deco supper club at the Lake Merritt Hotel with a panoramic view of Lake Merritt,
Terrace Room Executive Chef James Dame has created a familiar American bistro with sophisticated updates. Eight 4-oz servings
1 qt Cream
8oz Sugar
8 Egg Yolks
1/2 Vanilla Bean, Scraped
1 pint Fresh Berries (Such as Raspberries, Blueberries or Black Berries) - Place eight 4-ounce ramekins in a shallow baking dish. Fill baking dish half way with water.
- Fill each ramekin with 4 to 6 berries set aside
- Combine the cream, vanilla bean and half the sugar in a sauce pan and bring up to a boil
- Combine egg yolks and the rest of the sugar in mixing bowl
- Slowly combine hot cream mixture with egg yolks and sugar, stirring continually
- Strain mixture through fine strainer
- Fill ramekins to top with mixture
- Bake covered in 300 degree oven until firm, then cool
- When ready to serve sprinkle top of Crème Brule with 1/2 table spoon of sugar and burn sugar with propane torch and serve.
