What does Michele eat?
Well since I'm usually freezing....and now the seasons are changing...it's soup for dinner!
Also I adore squash season...whether it's butternut or kombucha squash..
((We are never too concerned about the veggies size going in, because we blend it after))
I invite you to step away from the baconator...and try....
Quick Squashie Soupies:
**requires vitamix or strong blender to blend the soup**
Fill big pot w/filtered water
Wash and then cut up bunch of squash and add (could be entire squash depending on pot size...and yes we keep skin on because it's easier, but we cut out the top)
Wash and cut up ton of onions*
Wash and cut up ton of celery*
*the food processor makes this part fly by--you can slice it all w/big slicing blade
Bay leaf optional
Throw it all in pot o' water and boil it all together until squash is done
After the pot o' soup cools then you can start blending it batch at a time....
We usually store it in batches at this point.
THEN, when you are ready to rehat to serve, here comes the floaties.
Floaties are a VERY important part of the soup experience.
Our favorite floaties for this soup include:
Reheat and add salt and pepper to taste, and possible floaties include:
--organic frozen corn (trader joes)
--organic frozen peas (trader joes)
--really nice touch is adding some fresh dill at the reheat
Either when reheating or on after as top garnish:
--diced onions
--diced cilantro OR
--diced parsley
--diced avocado
--diced tomatoes
Get creative w/your floaties!
You can serve w/Nama Shoyu, soy sauce or cayenne to taste if you want.
Makes a couple days worth of soup....Nice to be "done" for a few days :)
