Don Odiorne, IPC Vice President Foodservice, introduces the Idaho Potato Commission (IPC) Foodservice Tool Kit with a historical perspective, “For 75 years, the IPC accumulated and revised information about basic tips on potato preparation, along with the steps for planting, harvesting, sorting and shipping of IdahoŽ potatoes. For our Diamond Anniversary (2012), we compiled our knowledge and expertise into one comprehensive volume.”
"The IPC Foodservice Tool Kit is a terrific educational resource," seconds Armand Lobato, IPC Western Foodservice Representative. “Foodservice buyers love the brief, but inclusive, format with seven tabulated topics. Distributors offer it to their sales force and customers. I also use the Foodservice Tool Kit as the basis for Idaho potato seminars at culinary schools. In fact, chef instructors at several schools have added it to their course syllabus.”
The handy chart inside A Size Guide to America’s Favorite Potato, a compact purchasing aid, indicates the most popular count sizes, number of potatoes per carton, maximum size range, and the sizes that most of the potatoes in each [50-pound] carton will be.
The IPC Foodservice Tool Kit (65 pages) carries the CAFE Seal of Endorsement, and is available to chef instructors in limited quantities (5 copies per school). The IPC encourages culinary students to download the digital file at www.idahopotato.com/foodservice. A Size Guide to America’s Favorite Potato is available to both instructors and their students (limit one per student).
