Catering Operations Workshop Keynoter Announced

As a caterer, Michael produced everything from simple box lunches to corporate galas serving thousands.  His vision and passion for catering has made him a dynamic force in the industry.

The week-end event will focus on educators’ challenges in their own catering operations, ranging from special events to school restaurants.

The CAFÉ event will begin Friday afternoon and conclude by 2 p.m. on Sunday.  Your registration fee of $299 (plus $75 for materials) includes an opening night reception, two breakfasts, two lunches, all educational materials, a chef’s jacket and tool kit.

For on-line registration, go to http://cafemeetingplace.com/2011-events/catering-operations.html.  Hotel rates are $89 plus tax, single or double with free transportation from the airport to the hotel.  (Don’t forget!  Louisville is also served by Southwest Airlines!)  All CAFÉ events award ACF continuing education hours.

Every educator will benefit from this packed agenda!

D.E.A.L. of the Week

CAFÉ is proud to once again offer educators a link with the hospitality industry by providing a D.E.A.L. (Deal for Education and Learning) of the Week.  This week’s feature:  The Idaho Potato Commission!

Idaho Potato Commission, Foodservice Toolkit

In this informative and comprehensive Idaho Potato commission “Foodservice Tool Kit,” you and your students can explore how Idaho® potatoes win accolades and why leading chefs across the country insist on the “Grown in Idaho” brand.  Use the 65-page “Foodservice Tool Kit” as a valuable produce resource or as the basis for a block of lesson plans.  Contents include Idaho® potato history and propagation; scientific distinctions and specification/purchasing basics; potato cooking chemistry and problem solving; preparation how-to and typical cooking yields; “Potato 101” knife and cutting skills; and a cost-per-serving calculator.
