CAFE: The Center for the Advancement of Foodservice Education- Become a Fan!


CAFÉ’s mission is to link the foodservice industry with the foodservice classroom.  Our focus on the classroom means that we bring you up-to-date trend information, new concepts in restaurants, thought-provoking presentations on HOT topics, as well as opportunities to share best practices in both teaching skills as well as curriculum content.

Our 2011 Leadership Conference, hosted in the new culinary arts center at Johnson & Wales University in Providence, has an impressive lineup of presenters:

Thursday, June 23


Attend a full-day of educational Best Practices in a Symposium format

Or

Attend two,two-hour demonstrations of master classes to inspire your classroom leadership.  Topics include:  Specialty Chocolate, Molecular Gastronomy, Asian Cuisines, Healthy Italian Cooking, Cheese Making and beer pairing as well as the opportunity to have a guided tour in the Culinary Museum.  All of these classes are led by experts in their fields.

Friday, June 24

Keynoter Chef John Folse will share his new concepts on fine dining and describe his journey in opening his new restaurant “R’Evolution” in New Orleans with Rick Tramonto.

The first of two Trendsetters panels will be led by Chris Koetke from Kendall College, followed by the annual InfoFair sponsored by our partners.  At lunch, you will have another opportunity to share ideas at roundtables with topics such as “So you want to be an author?,” “ Experiential Learning,” “50-minute Classrooms,” and more!

In the afternoon, you may choose one of two sessions which will be relevant to your own schools:  Technology (what’s hot!) or Multi-cultural challenges in the industry/classroom.  We have experts in technology explaining new classroom tools; and Gerry Fernandez and Maureen Pothier will be jointly presenting on where we are headed with the challenges and benefits of multiculturalism in our industry as mirrored in our classrooms.

We will hear from another great keynoter, Graham Kerr,  who has re-invented his message and who will share his partnership model with schools focusing on teaching healthy foods.  What will the menu of the future look like?  His ideas will inspire you!

A second trendsetters panel will be moderated by Brent Frei and attendees will hear from Hot chefs in the New England area, including an outreach by one of the Culinary Olympics chefs. As an added bonus, not only will you hear from an innovator in dining, but you will experience and get to tour his Food Truck at lunch following the morning sessions!

The professionals involved in this year’s Leadership Conference are giving their time and sharing their expertise so that attendees will be inspired in their classrooms as well as sharing with their students what the industry is doing and thinking and planning for the future.

The D.E.A.L. (Deal for Education and Learning) of the Week

The American Lamb Board’s new DVD presents the breakdown of a lamb carcass into major primals as well as popular lamb cuts.  The DVD also includes videos of how to fabricate a leg of lamb, how to create a BRT leg roast and how to French a rack of lamb.

Two Great Summer Events


June 15-17, 2011    First-ever Educators Sustainability Symposium
                             Hosted by Kendall College, Chicago

This event will help you in your first steps towards sustainability/greening in your curriculum.  We will hear from speakers on the local and national level as well as go to a City Market, develop a Mystery Basket exercise for your classes, learn how to use a school garden and wood-fired oven, and much more!
