With an ongoing obesity epidemic and menu labeling regulations impacting foodservice in America, the need has never been greater for chefs to discover healthful, delicious dishes. A look to the past, and the culinary traditions of Italy reveals a wealth of inspiration to solve this modern challenge. Authentic Italian cuisine is rooted in the classic Mediterranean diet; with an emphasis on fresh vegetables, whole grains, legumes, fish and lean proteins.
