An Amazing Dessert Contest


CAFE: The Center for the Advancement of Foodservice Education- Become a Fan!


CAFÉ and The Wisconsin Milk Marketing Board are pleased to announce their second WMMB Contest for foodservice instructors at all levels.

This year there is a twist!  There will be 12 winning TEAMS chosen for the all-expense three-day tour of Wisconsin Cheesemaking, July 17-20, 2011.  The teams will consist of a student and a faculty member.  You may choose your team in a number of ways, but only one recipe will be accepted on behalf of the team and either both individuals have developed the recipe OR an instructor can run a recipe contest within his/her own class to choose the winning recipe.  Here are the specifics:

Theme of this year’s contest:  Dessert Creations using Wisconsin Cheese!

Contest Rules:

  • Recipe must be submitted by Chef/Student team (see above)
  • Please do not enter if you have already been on a WMMB tour
  • Recipe must be done in WMMB template plus photo of dessert must be included. Click here to view the WMMB template.
  • Recipe must contain at least one Wisconsin Cheese—more than one even better!
  • 12 teams will be awarded all expense-paid trip to Wisconsin.  Do not enter if you cannot attend on those dates.
  • Recipe execution must be under 2 hours.
  • Recipes will be owned by WMMB
  • Deadline:  April 1, 2011.  Winners notified by May 1, 2011.
  • Winners will be based on creativity, eye appeal, flavor, ease of preparation, use of Wisconsin Cheese and name of dessert.

Instructors can request the beautiful 2011 Idaho Potato Foodservice Calendar “Simplicity Redefined.”  Included in this visually stunning calendar are recipes and photos of favorites ranging from Crispy Yukon potato “truffles” with truffle cheese to “Baked potato,” crème fraiche agnolotti, potato brown butter, pancetta, truffle essence and beyond!!
This beautiful calendar and recipes (with a bonus of industry shows and conferences listed month-by-month) can be requested by emailing jvail@potato.idaho.gov.
