CAFÉ has planned a perfect fall week-end in North Miami Beach for instructors/trainers who want to learn more about Latin-influenced foods.
The event begins on Friday afternoon with a “star-chef” presentation to introduce Latin Cuisine to the attendees. Following that introduction, Chef Jorge de la Torre, Dean of Culinary Arts from JWU/Denver, will showcase Wisconsin Spanish-influenced cheeses—showing you how to incorporate these cheeses as important ingredients in your international cuisine classes.
A reception, featuring many of the dishes you will be preparing on Saturday, will follow, including specialty drinks from our southern neighbors.
Saturday is a full day starting with Steve Jilleba, CMC, who will discuss and them demonstrate dishes from both Peru and Brazil. Attendees will then practice these recipes and prepare their own lunch!
Following lunch, two amazing sessions follow. The first will be “Green Bananas and Hairy Roots: staple starches of the sub-Sahara Diaspora and the Caribbean,” by Dr. Patricia Wilson—an expert in global, contemporary cuisines and professor at JWU. Her food focuses on tropical culinary cultures and their impact on the Caribbean and the world.
Next up: Gian Flores, who will demonstrate the different types of South American desserts with modern presentations.
Attendees will have Saturday night to explore South Beach or other dining choices. Sunday morning we will all venture out to the Fruit & Spice Park in Redlands, Florida, for a culinary adventure and presentations.
We will return to the hotel around 1:30 p.m. on Sunday, allowing folks to fly home in time for Monday classes! Or if you can stay another night at the Newport Hotel, the incredible rate of $99 per night is extended. The hotel is on the beach and features not only some great restaurants, but also a Tiki Bar and Spa!
