In a crowded field of instructor professional development opportunities, it is important to understand how CAFÉ chooses its yearly lineup of specialized workshops.
Many organizations specialize in culinary/baking “skill” development; others look at teaching techniques. CAFÉ has chosen to identify industry and education trends which may need to be included in a school's curriculum in order to keep their programs up to date and their students prepared for employment.
This year CAFÉ is focusing on Front–of–the–House instructors (who have long complained that no organization provided specialized updates for them); French Cuisine (because most of our instructors have been trained classically but realizes that times have changed); the Healthy Menu (since we need to be focusing on nutritional, tasty dishes for our public health to improve); and The Latin Table (the fastest growing segment which goes way beyond tacos).
We promise you that we will continue to look for short, affordable programming with an eye as to what you NEED to know in order to help you make a decision about how you should spend your educational time. Get more information about CAFÉ events
Ancient Grains
One of the master classes offered at the Leadership Conference in Baltimore, June 25th, is Ancient Grain for Today's Global Cuisine.
No grain in history is as prominent in cuisines around the world as rice. Attendees will join Chef Michael Wagner as he explores timeless favorites prepared with contemporary flair.
Today's interest in healthy cooking, vegetarian cuisines and serving locally grown foods has expanded the appeal of rice to new levels. Rice is also idea for the gluten-free diet.
This workshop is sponsored by the USA Rice Federation and the California Rice Commission.
Don't forget! The Hampton Inn and Suites Baltimore Inner Harbor is holding rooms for CAFÉ Leadership Conference attendees until Friday, June 11th at the rate of $149+ per night, single or double.
