Fritz Sonnenschmidt, CMC, Guest Chef at Leadership Conference
CAFÉ is proud to
announce that Certified Master Chef Fritz Sonnenschmidt will be a Guest
Chef at
the 6th Annual Leadership Conference, June
25-27, 2010, in
Baltimore.
Chef
Sonnenschmidt will be representing the Culinary
Institute of America as a celebrated chef at the Opening Night
Reception and will
design and implement original recipes on behalf of the Alaska Seafood
Marketing
Institute.
Some
of the
dishes that attendees will taste include: quenelles of
halibut, smoked salmon with beets and pears, salmon tatar, scallop and
mushroom stroganoff.
The reception will be held at the historic
Commerce Exchange Building
in downtown Baltimore, home of Baltimore International
College’s
administrative offices, library, and classrooms.
French Cuisine: From Classic to
Contemporary Applications
This hands-on workshop will focus on French cuisine and how traditional
dishes and preparations can be translated in contemporary applications
(time saving techniques as well as more healthy adaptations).CAFÉ is
honored to be working with Francois Dionot and his talented staff at
L'Academie de Cuisine, June 18-20. The format will be lectures,
demonstrations, and hands on time working with dishes that are familiar
as well as those that are more contemporary.
