Meet the Presenters: Dole Fruit Pairing Master Class
Attendees at the CAFÉ Leadership Conference, June 25–27, will have the opportunity to work with two corporate chefs from Dole Food Company, who will share with them innovative and exciting pairing techniques with affordable ingredients available in any foodservice classroom-–fruits!
Chef Rick Perez, CEC, has been honored in numerous culinary competitions and has a background in both hotels as well as in the area of food science.
Chef Marcus Tolson has been a chef for more than 30 years in restaurants, country clubs and large event catering as well as experience in new product research and development.
Both chefs have been advocates for promoting education and professionalism in the culinary world and are prepared to share with educators innovations such as mango & lime; pineapple & soft cheeses; pineapple and soy sauce; fruit & smoke; fruit & tea and much more!
The hands on master class is included as part of the registration at the Leadership Conference, June 25th and will be hosted by Baltimore International College. Find more information and on-line registration. Early registration fee deadline is May 1!
Early Registration Deadline
May 1 is the date of the early registration deadline for CAFÉ events this summer. There are significant savings if you register online, by fax, or mail by that time.
Also note: the hotel cut–offs are generally a month preceding the event. Call the CAFÉ office at 410-268-5542 if you have any questions. We will process purchase orders, handle credit cards or bill you at your request.

May 1 is the deadline for the early registration fees for CAFÉ events this year! Your payment does not have to be in on that date, but your registration needs to be filled out and in the CAFÉ office by then.
