Chef Patterson will be presenting at CAFÉ's French Cuisine workshop, hosted by L'Academie de Cuisine, June 18–20, in Gaithersburg, Maryland.
The emphasis of this workshop will be on looking at classic French preparations and how they can be adapted to contemporary foodservice outlets.
Chef Patterson will look at vegetables: innovative and creative ways to present them, while maintaining the beauty of their freshness and integrity of their taste.
Brian Patterson graduated from L'Academie de Cuisine in 1987, after completing a degree from the University of Chicago in Music. He extended his education by studying with Madeleine Kamman at the Beringer School for American Chefs.
His classes are technique driven as well as menu-driven–which gives his students both professional as well as entertaining sessions. Chef Patterson writes a column called “It's About the Food” and attendees will enjoy his portion of this unique workshop for its good humor and great information.
