Brian Patterson—this week's featured chef

Chef Patterson will be presenting at CAFÉ's French Cuisine workshop, hosted by L'Academie de Cuisine, June 18–20, in Gaithersburg, Maryland.

The emphasis of this workshop will be on looking at classic French preparations and how they can be adapted to contemporary foodservice outlets. 

Chef Patterson will look at vegetables:  innovative and creative ways to present them, while maintaining the beauty of their freshness and integrity of their taste.

Brian Patterson graduated from L'Academie de Cuisine in 1987, after completing a degree from the University of Chicago in Music.  He extended his education by studying with Madeleine Kamman at the Beringer School for American Chefs.

His classes are technique driven as well as menu-driven–which gives his students both professional as well as entertaining sessions.  Chef Patterson writes a column called “It's About the Food” and attendees will enjoy his portion of this unique workshop for its good humor and great information.

8 More Days!

April 1 is the deadline for CAFÉ's unique financial program for foodservice instructors.  No other organization continues to find ways for trainers to finance their way to ongoing professional development opportunities offered by CAFÉ and its host schools.

• Develop a recipe using Wisconsin cheese and win an all–expense paid trip to Wisconsin in mid–August.
• Submit an application for the Idaho Potato Commission's Leadership Award and win $1,000 cash prize, $500 travel reimbursement, and complimentary registration to the CAFÉ Leadership Conference in late June.
• Submit an application for the CAFÉ/Kendall College Green Award and win $1,000 cash prize and complimentary registration to the CAFÉ Leadership Conference.
• Write a brief description of (1) student learning through competitions OR (2) effective methods used for student retention OR (3) fund raising projects and win a free registration to any 2010 CAFÉ event. 
• Write a brief description of (1) effective use of an Advisory Committee OR (2) innovative testing methods and win a free registration to any 2010 CAFÉ event plus $300 travel reimbursement.

Camden Yards—Home of the Orioles professional baseball teamy

For those attending the CAFÉ's Leadership Conference, you will have opportunities that week–end to walk a few blocks to see a home game at the world–famous Camden Yards in Baltimore.

The Conference is June 25–27 and is hosted by Baltimore International College.  Our hotels are in the downtown area and are easy to walk to the ballpark in addition to The National Aquarium, the National Science Museum, the Inner Harbor, and much more.
