Sara Hill from the Wisconsin Milk Marketing Board will showcase Wisconsin Blue Cheese and the Wines that Love Them--the perfect ending to a fabulous meal!

Wisconsin Cheesemakers produce over 35 Blue Veined cheeses—from creamy and mild to big and bold flavors.  These amazing cheeses love sweet, thick dessert wines which contrast yet balance the savory, rich and complex notes of blue cheese varieties.  You will taste and learn more about these wonderful cheese and wine pairings.

Christopher Koetke, Dean and Certified Executive Chef from Kendall College will demonstrate how you can teach the principles of water pairings.  Whether sparkling or still, from springs in mountains or locally bottled, there are important guidelines to suggesting the right water to your customers.

A Sneak Preview

I’ve described to you the Friday night’s demonstration for all attendees of the FOH National Symposium.  Here is a sneak preview of one of the educational sessions on Saturday.

David Landau, MS, CHE, and Instructor from LCB/Scottsdale will be demonstrating “In Box Exercises,” a program which he has used successfully in his own classes.

“In Box Exercises” are simulation exercises where students receive a folder that holds background information on a fictional restaurant and the contents of an “inbox” which contains a number of action items.

Attendees will help students learn how to prioritize, create responses and actions, and generally enhance their critical thinking and problem solving skills.

Attendees of the CAFE event will leave with a handout and folder containing a complete inbox exercise to take back to their students.

Once again, CAFE and Kendall College have joined forces to offer a GREEN Award to your program, recognizing your efforts towards sustainability and a greener future.  The cash prize is $1,000 plus a complimentary registration to the CAFE Leadership Conference, June 25-27, 2010, in Baltimore.

And GREEN is the topic of one of the breakout sessions at the Leadership Conference on June 27th.  Schools will hear about Green Audits that the NRA is conducting at the high school level as well as an incredible on-line curriculum that the Chefs Collaborative is launching.  The discussion will be led by Chris Koetke, CEC, who will also discuss what’s ahead in green equipment.  This is a not-to-be-missed session!

A final note

CAFE has an incredible schedule of events for 2010, starting with our March FOH National Symposium, and followed by a French Cuisine Workshop, a Healthy Menu Workshop, and a Latin Event--in addition to our annual Leadership Conference.  Keep in mind that there are many ways to help finance your attendance at these events, including scholarships and awards.  Get  more information about how you can apply for these funds.
