Basic Black Bean Soup
Serves: 4
Nutritious, delicious and as versatile as it is affordable. Black bean soup is like a little black dress for the dinner table.
2 Tbsp. Olive Oil
1 clove garlic, crushed
2 carrots, finely chopped
1 medium onion, finely chopped
2 15.5oz cans of black beans un-drained
1 cup chicken broth
1 Tbsp. brown sugar
1 Tsp. ground cumin
1 Tsp. oregano
2 bay leaves
1 Tbsp. white vinegar
Black pepper
1. Heat oil in pot over medium heat. Add garlic and all seasonings and cook about 30 seconds.
2. Add vegetables and saute, stirring frequently, about 10 minutes or until tender.
3. Add chicken broth, beans, brown sugar and vinegar and bring to a boil.
4. Reduce heat to low and simmer, uncovered, about 15 minutes or until soup thickens.
5. Remove bay leaves and season before serving.
