Good bye to Summer Party Ideas.
Now that the first day of fall is here, how about an "End of Summer Party"? Gather friends for Tapas and wine. Here are a few suggestions that require little to no cooking. Fill endive leaves with long slices of mozzarella, thin strips of pimientos, and pink anchovy fillets. Sprinkle with olive oil, salt, pepper and paprika. Arrange on a platter and serve.
Marinate thinly sliced fresh halibut with lemon juice, olive oil, paprika, & red chili (if you like it hot). Leave in the fridge for a couple of hours, depending on how rare you want the fish. Slice large cherry tomatoes in half and remove seeds. Sandwich one or two slices of fish between the tomatoes on a skewer. Sprinkle parsley & chives on top and serve well chilled.
Mix together equal portions of bleu cheese and cream cheese add chopped fresh figs. Slice a French baguette in 1/2 inch slices. Coat with olive oil and bake until golden. Spoon cheese mixture on to baguettes and top with a walnut half.
Use the grill one last time. Soak some skewers overnight in water so they don't burn easily on the grill. Wrap raw, deveined shrimp with a generous portion of bacon slices. Drizzle with olive oil. Place on a hot BBQ 2-3 min each side and serve.
Marinate 2inch cubes of pork loin over night with equal parts of white wine & olive oil, 3 cloves of minced garlic, a dash of paprika and fresh thyme. Skewer 2-3 pieces and place on a hot BBQ about 8min turning them several times. Squeeze fresh lemon over them and serve hot. End the fun with the last of summer's fresh fruit. Chop fruit into bite size pieces & Serve with yogurt mixed with fresh mint and a little lemon zest.
