This is the time for ripe full favored peaches
* Cake 1/2 cup butter softened
* 1/2 cup sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 1/4 teaspoon almond extract
* 1 cup all-purpose flour
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* 3 cups sliced peaches - about 2 lbs peeled or unpeeled
* 1/4 teaspoon cinnamon
To create the crust - in large bowl, cream butter and sugar until fluffy, add eggs one at a time, add vanilla & almond extract.
In separate bowl combine flour, baking powder & salt.
Add to mixture mix well
Pour into a greased 9" square pan
Then lightly toss peaches with cinnamon and 1 tablespoon of sugar
Arrange peaches on top of the crust
Topping
1/2 cup all-purpose flour
1/4 cup sugar
1/4 cup cold butter cut into small chunks
3 tablespoons crushed sliced almonds
Lightly mix together with a pastry cutter or fingers until crumbly - Sprinkle over top.
Bake @ 350 for 50-55 minutes or until topping is a light golden brown. Cool
A delicious dessert for a hot summer/fall night. Serve plain or with ice cream
