We have had the great fortune to
be able to get
our
hands on yet another entire wheel of
single family Parmigiano
Reggiano. Because we loved the wheel we
brought in last year, we made sure to bring
the same thing in again this year. So, for
the second year in a row, we have
secured a 36-month aged wheel from
Caseificio Sociale Val Parmossa,
located near the small town of
Tizzano Val Parma, Italy.
The parmigiano reggiano from
Caseificio Sociale Val Parmossa is
known as a "mountain" parmigiano as
the source milk for this caseficio
comes from 15 different dairies, all
located within 30 kilometers of the
cheese making facility. In Italy,
it is believed that the forage of
the higher elevation mountain
dairies is superior as hillsides are
great natural environments for
growing a variety of grasses and
herbs. And therefore, the
assumption is that high-quality
forage turns into high-quality milk,
loaded with all of the right
elements for full flavor and long
aging of Parmigiano Reggiano.
Very few of these cheeses are
released to the world
and very few are available in the
United States. Salumiere
Cesario is one of
the few domestic purveyors who are
able to bring this
incredible experience to our
customers here in Walla Walla.
So, for the third year in a
row, always the Saturday following
Thanksgiving, we will be hosting a LIVE, IN-
STORE
event to
celebrate this amazing labour of
love. On Saturday,
November 28th, we will be
breaking down this wheel right in
front of your eyes!
Once the wheel is broken down we
will be offering
hourly specials on this day only.
For the first
hour this incredible
cheese will be offered at
$18/lb! Every hour
thereafter, the price
will increase by $1/lb. The regular
price for this
cheese will be held at $25/lb
until the wheel is
gone.
We only have this one wheel, and
once it is
gone that's it! For the past two years, we
have sold
over 40 pounds of the newly cut
wheel in the first hour of our event!
Please note that we will
only be
able to offer the special pricing
for in-store orders and will not be
able to apply the discount pricing
structure for call-in orders during
this event.

product.
