So, September came and went so fast that we didn't even get a newsletter done! And we had so much we wanted to tell you about! Oh well. So it is that we begin another fall here at Salumiere Cesario. While our outdoor seating has been set up for a while, people in town are still getting used to the idea. We are hoping to have some later nights while the weather is still warmer, so stay tuned for details.

We are now moving in to our fall selection of cheeses and beers, less soft small cheeses and more bigger wheels and aged summer milk cheeses. We have added our first Gustiamo on the calendar for fall and will be adding more soon. The olive oil bar is expanding with a few new oils and new salts are on the way too.     For those of you just looking for a great bottle of wine tonight, we have that too and at great prices! We can even help you select a wine that goes perfectly with whatever you are eating. We have just received in the following wines:
    Domaine Alary Le Grange Daniel "a combination of Grenache, Syrah, Cinsault, Counoise, and Cabernet Sauvignon, all planted just outside the domain's home of Cairanne. Spicy cherries intermixed with saddle leather, resiny pine forest notes, and pepper are present in this full-bodied, chunky, but surprisingly flavorful and well-made wine."

    Yann Chave Crozes Hermitage 2006 "le rouvre" "Sweet and ripe, with lots of mocha, dark licorice, plum sauce and fruitcake flavors backed by a fine-grained structure and a long, mineral-tinged finish. Shows nice weight for the appellation. 92pts WS"

    Domaine Georges Vernay Condrieu 2007 "Really bright and superracy, with a tightly coiled core of orange blossom, honeysuckle, green fig, yellow apple and chamomile notes waiting to gush forth. Taut acidity holds this back for now, so cellar to let it round into form. Best from 2009 through 2012. 92pts WS" This wine usually retails for around $80 but, we have it for $56!

    We have also restocked some of our sparkling wines, including the return of the Prosecco that everyone keeps asking about, in both white and pink.


    Beer

    We continue to be THE place for craft beer in Walla Walla, because we keep bringing in great beers from all over the world. For those of you that have been following us on Facebook, you may have seen our recent post about New Belgium's La Folie barrel aged ale that we have been desperately trying to get into the store. We are still trying, but we are asking for YOUR help. Contact New Belgium Brewery and tell them you want the La Folie here in Walla Walla at Salumiere Cesario. With your help we just might be able to get it in here soon.

    Our saison style beers are making their way out of the store and the fall and winter beer styles are heading in. Be on the look out for the following beers soon:
    Anderson Valley Brother David's Double Session Black
    Chimay Red, White and Blue
    The Abyss
    and many others.

    Cheese

    Cheese remains our biggest selling item since day one. Maybe because we store our cheeses in a carefully crafted environment. Maybe because we cut our cheeses to order and wrap them carefully (and not in plastic!). Maybe because we hand select varieties that compliment the food and wine of our community. What ever the reason thank you for continuing to make us your source for cheese in the Walla Walla Valley.

    We have just received our first THREE wheels of Rogue River Blue with two more on the way. The Wheel for September is already gone, in fact it was gone with in three days of opening. We have one for October, one for November and two for December and the Holidays. This is a must for any fan of blue cheese. "This hand crafted raw cow's milk blue veined cheese develops a beautiful natural rind as a result of hand turning and tending the cheese several times a week. The wheels are aged for up to a year in our special rooms which were constructed to simulate the ancient caves in Roquefort, France."

    Fromager D'Affinois remains our best selling cheese. No surprise as it is brie like in consistency and appearance with richer more buttery like flavors. But it is the way that we take care of it that makes all of the difference. A customer once told me that they had purchased some d'Affinois (as we affectionately call it here) at another cheese retailer. When I asked how it was their reply was "I'll never buy it anywhere else but here again, I get it now." They didn't elaborate and I didn't ask. Come in and see why buying cheese is better here.

    And, don't forget that all of our cheeses are stored and aged in the only climate controlled, walk in cheese closet in the Pacific Northwest. Come in and taste why Salumiere Cesario is THE place to buy cheese in Walla Walla.

    Our Salt Bar continues to be a big attraction here in Walla Walla. Why? We don't know, but as long as you all keep lovin' it we'll keep doin' it. We are going to be expanding the Salt Bar with a few NEW salts. We aren't going to name them here, but we'll let you know as soon as they come in (we expect them by the second week of October).

    There will be some old favorites returning and some new flavored salts too. Trust us when we say that it will be even better than before. We also have small tins of salt available now for those looking for the perfect gift for that food lover or home chef.


    Olive Oil Bar

    Many of you have enjoyed the Olive Oil Bar that we started last June. Well, we have recently added more olive oils to choose from as well as a 750ml sized bottle.

    The 750ml size bottle is your standard size wine bottle, and the original impetus for us to start the bulk bar as Walla Walla does not have a good glass recycling program. You can now purchase the 750ml bottle size and soon, we hope that you'll be able to bring in your own clean, used wine bottles to fill with olive oil. The 500ml size bottles will be phased out in time (you'll always be able to bring them in to refill) and will be replaced by the 750ml as the new standard. The cost to refill the 500 will stay at $18, and the 750 will be $23. The new bottle will still only set you back $5 but can always be refilled (and who's to say that any 750ml DARK GREEN bottle is not like any other?).

    But, what we are most excited about is to be able to tell you that our new oils have come in and are already on the bar. Right now we have the following bulk EVOO's in stock:
    Spanish, comes from the Badajoz area made of Arbequina, Hojiblanca, Picual, and Morisca olives, rich buttery.
    Italian, a greener coloured oil, slightly peppery, finishes with a slightly grassy citrusy note.
    California, made from 100% Arbequina olives this is butter with a bit of grass and pepper.
    Spanish, our second Spanish oil comes from the Priorat and 100% Arbequina olives (seeing a pattern here?), flavors of green apple, kiwi, artichoke, mint and banana peel.
    Turkish, from ancient groves of olive trees comes an exceptional oil. Hints of artichoke, avocado, and banana leaf.

    As the idea catches on we plan to expand and rotate oils we are still looking for good oils, so if there is something you have found that you like, let us know. Cheers.

    Since opening day April 6, 2006 we have been championing local produce. It is always important to support our local farmers whenever possible as they are the stewards of the land, that land that makes up our community. Whenever local produce is in season, we will have some.

    Right now we have fresh figs and local arugula. Citrus season (our favorite time!) is almost upon us so check the blog or our Facebook page for updates.

    Our pickles seem to be getting more and more attention these days. We'll we just finished another batch and it might just be the best yet. Made with locally sourced cucumbers too! We are creating a truly locally made product that we hope you continue to enjoy. We have quart size containers ready to go in the cold case, so come in and pick one up for yourself and maybe even one for your pickle loving friend. The juice makes a mean bloody mary too!


    Lunch and dinner too. . .
    Fondue

    While we have been offering food for a while many of our customers still don't know about our menu. We have a set menu of small plate items that are always available (we do sometimes run out of things because everything is made fresh). We also have daily specials too.

    Right now, until the tomatoes run out we are offering a hot, open faced tomato and cheese sandwich. Damon's mother used to make these for him when he was a little boy. Tasting one is like living that moment in Ratatouille, when Ego is transported back to his humble childhood.

    We are going to be making soup starting this week so come in have an honest meal. Something made with quality ingredients and care.

    We are waiting for our fresh Albacore to come in soon so we can start our sashimi nights this fall. We'll be cutting up FRESH Oregon ALBACORE and serving it with our own ponzu sauce. This is not to be missed, trust us. We are also going to be doing some late Thursday night Fondue. We'll keep you posted on when the first one is, but check the blog and the Facebook page for updates.

    Gustiamo is BACK!

    Our Gustiamo events are BACK! Yes! We have taken far too long of a hiatus and we are so very excited to announce that we have scheduled our next Gustiamo and we hope you will be able to join us!

    On Thursday, October 15th, we will be hosting Castillo di Feliciana for our next Gustiamo event. Winemaker Ryan Raber will be with us to taste through five amazing wines, just newly released!

    We will present a tasting of Semillion, Pinot Grigio, Viognier, Tempranillo, and Miercoles (a blend of Cabernet and Syrah from Pepper Bridge Vineyard) for this event, of course paired with some delectable salumi, cheese and other treats from our store.

    The cost for this event will be $25 per person, limited to the first 30 guests. Please call us or come and visit us to place your reservation for this must-do event!
