May is here and spring release is
behind us!
The weather is warming up (finally), and we
are starting to see signs of life again.
Mother nature is gracing us with some
wonderful spring produce right now as well as
some beautiful days here in Walla Walla. If
you are not fortunate enough to live here
then you should plan your next trip soon as
Walla Walla is absolutely beautiful this time
of year, and the tourists aren't out in force
yet. We have several exciting things to tell
you about, so let's jump right in.

White wine is the de rigueur right now at
Salumiere Cesario. Although the rose's are
starting to show up too. We have several new
wines right now on our shelves with many more
on the way.
Domaine de la Hortus Rose Made from
grenache. Lovely light delicate rose petal,
cherry, raspberry nose with a restrained, dry
finish. What is distinctive about Pic-St-Loup
wines is that they are substantial without
being heavy. They are well balanced and they
can be surprisingly sophisticated."
Villa Creek Avenger GSM Paso Robles
2006 This is a wine that needs some
explanation after I describe it as Big, Loud,
Dumb. Now I mean this in the BEST possible
way.(If we don't like it we don't sell it).
Think of it like that guy or girl you went
out with a few times. Fun to have around but
not meant for deep conversation. That being
said this wine over delivers on the yum
factor. Big, ripe black fruit and earthy
notes with enough acid to keep it lively.
This is fun wine. Drink accordingly.
Hop Kiln Big Red 2006 This Big Red is
all about bright red fruit and spice -
raspberry, cherry and pepper. A friendly,
drinkable and zesty red wine at a very
affordable price and perfect for BBQ. A
proprietary blend of Zinfandel, Cabernet
Sauvignon, Carignane, Malbec and Cinsault.
Gougenheim Malbec Argentina 2007 Dark
red color, rich and strong. Aromas include
scents of plums, black cherry, black
currants, chocolates and violets. Round and
supple with a long finish. And at $9 a steal.
How's that for economic stimulus!
Broadbent Vinho Verde 2008 An ideal
warm weather wine, excellent for lunch and
picnics, this wine is equally as lovely as an
evening aperitif. It makes a brilliant
pairing with any fish, shell fish and
poultry. "Is the world's greatest pairing for
a Caesar salad".
Turnbull Old Bull Red 2006 70% Merlot,
11% Tempranillo, 7% Petite Sirah, 5% Syrah,
4% Sangiovese, 3% Barbera, That's a lot of
oomph jam-packed into a bottle, balanced by
oak spice imparted by 16 months in French
oak. Give this wine some air if you drink it
now, or lay it down to let all of those
individual components continue to weave their
harmonious blanket.
Gruet Blanc de Noirs NV The rich and
toasty character of the Blanc de Noirs is
balanced and superb. Aged for two-year
minimum. Winemaker's Note: A fine salmon
color, aggressive mousse and a lovely fruity
wine with plenty of immediate charm and
toasty aromas. There is also an explosive
juicy flavor of raspberry.
Dm. Louis Moreau Chablis 1er Cru
2006 Domaine de Biéville is a Chablis of
real class. Key to the wine's exquisite
concentration and crisp freshness are the
Domaine's 30-year-old vines, planted at 280
meters above sea level. This wine is
remarkably bright, with classic apple notes
and the distinctive stony character of top
Chablis. Satisfyingly long, it makes an
outstanding apéritif and a fine companion to
oysters and shellfish. Like all great
Chablis, this has the ability to age well for
several years in the bottle.
Dm. Grand Montmirail Gigondas 2007 80%
grenache (from 45 to 55-year-old vines), 15%
Syrah and 5% Mourvèdre (from 20-year-old
vines). The yield is just over two tons (33
hl /ha) an acre and all the fruit is
harvested manually. It emits explosive aromas
of kirsch, stone fruits, licorice, pepper,
suave baking spices and a slightly floral
character, perhaps violets. Supple texture,
with some real elegance, and a wonderfully
long and satisfying finish.
Dm. Grand Montmirail Vacqueyras
2007 The wine is vinified in much the same
way as the Gigondas, using about 65%
Grenache, 25% Syrah and 10% Mourvedre.
Replete with fruit and absent of the
rusticity often associated with this
appellation, this Vacqueyras offers a
delicious mouthful of wine, with notes of
berries, spice and a finishing note of licorice.

More beer keeps showing up at the store. We
received our last case of the Abyss from Full
Sail Brewing Co. in Hood River. Once these
are gone its not gonna show its head (no pun
intended) till next year. Come get some now
and lay them down for a few months. Contrary
to popular belief and pop culture some beers
do improve with age.
We currently have the following beers in

This is only a partial list and reflects the
ones that we have in good supply.

We will be cutting into another Neal's
Yard
cheese very soon. This one happens to be an
Isle of Mull Cheddar that we have been
aging
for a few months. Rivers Edge Chevre from
Logsden Oregon will be back in stock very
soon as well. Many of you may remember these
little gems of goat's milk glory from the
last few years. Supply has far been
outstripped by demand but we now have a more
steady stream that should be flowing to us.
We continue to source cheese from around the
Northwest and around the world. As new
cheeses become available to us we will
continue to sample and have you sample and
give us feedback. We want to support all the
cheese makers we can but want to make sure
that quality is the most important factor.
Grafton Cheese in Vermont has just
release a
new small bandaged, beer washed cheddar. We
are very excited to bring this in and will
announce more when it arrives.
Sally Jackson cheeses will soon be in
stock
soon too. The goat and sheep cheese will be
arriving in store on or around the 22nd of May.
More cheese will be arriving in the next few
weeks including many that we have not yet
told you about.

Since opening day April 6, 2006 we have been
championing local produce. It is always
important to support our local farmers
whenever possible as they are the stewards of
the land, that land that makes up our
community. Whenever local produce is in
season we will have some.
Right now we have
some amazingly sweet locally grown asparagus.
If you find yourself in need and can't make
it out to the Farmers Market on the weekend,
come see us. We'll have it fresh everyday
that we are open.
More local produce will continue to come in
over the next few weeks, as it does we'll be
posting it to our blog and updating our
Facebook fans. If you are not yet a Facebook
fan of Salumiere Cesario, just find us and
become one. We'll be sending out updates, as
we get new and exciting things in, and just
might even have a few specials just for our

We know that talking about cocktails in the
middle of wine country is like talking about
the Westminster Dog show at the local rodeo,
but sometimes you just need a cocktail. So
when the mood strikes know that we will be
there to help you stock your home bar with
what ever it is that you need, (except for
the liquor).
We continue to stock some great bitters from
Fee Brothers including the Orange and
Grapefruit Bitters. We continue to stock Q
Tonic and are working to get Fever Tree back
in too. We continue to stock Stirrings mixers
and rimmers. We are also pleased to announce
that we will be stocking an amazing French
Vermouth soon. This is not your grandfathers
vermouth, this is REALLY good, and Damon
doesn't even like Vermouth. How 'bout that?

For those of you that have been pining away
at the loss of your favorite cheese
implement, fret no longer. We have just
received our re-stock of Boska Holland Cheese
Tools. Many of you may have purchased these
in our store over the last two years or may
have seen them and wondered "Are those any
good?" Rest assured, they are and they are
the BEST. We have tried them and can
confidently say they are superior cheese
tools. We have all types of knives and
slicers in stock and more is on the way soon,
including Fondue Forks!
We also have a plethora of other cheese tools
including fondue pots, cheese boards, cheese
domes and big knives. If it works with
cheese, chances are you can find it here. If
we don't have it, we can probably get it. If
we can't get it. . .it probably dosen't exist.

Did you know that Salumiere
Cesario makes our own Pickles?
Since last summer we have been making our own
full sours right here in the store. We plan
on putting up a batch of Pickled Green
Tomatoes soon, too.
If you have never had a Pickled Green Tomato
and you are a fan of pickled things then
these you must try. Crunchy, a little sour
and really tasty. We eat 'em at breakfast!
When the first batch is ready we'll post it
here. Until then enjoy the full sours at the
shop, or with one of our corned beef
