Last weekend was Spring Release
Weekend here in Walla Walla, the single biggest wine
centric weekend in our fair town. To all of you who
braved the crowds and the traffic, thank you! (Yes
some people think we actually have traffic issues here
in Walla Walla.) May is always a big month for us here
at Salumiere Cesario. We have new items on the way,
we have restocked some of your old favorites and a
few other neat events and goodies planned for you.

Many of you have yet to experience the glorious liquid
gold that we are hocking right now. We have some
truly amazing Olive Oils in stock right now and we are
going to be launching our Bulk Olive Oil Bar by end of
month (really!). We are very excited about the estate
olive oils
that we have right now, especially the Les Costes
Estate olive oil which is very buttery and rich. This is
wonderful oil, hand made and for those of you who are
watching your cholesterol, a great substitue for butter.
The Trampetti oils, both the EVOO and the XV, are
more racy and bright. Both of these have that really
grassy note that defines Tuscan oils. The XV delivers
a bright black pepper kick on the finish. The Trampetti
estate oil is great on salads, as a condiment and even
as a nice finishing oil. The XV is purely a finishing oil
to
drizzle on your food at the last second. Oils like this
define great European cooking and a healthier way of
life.

The cheese closet is FULL! We have stocked up
again on some really amazing cheese. Although we
have now sold out of the Fleur de Maquis (Brin
d'Amour) we will be fully restocked in a few weeks.
We do have some other exciting new cheeses to
make note of:
Comte Fort Lucotte is a rich comte or gruyere that
comes out of Saint Antoine, France. The flavours are
somewhere between Cave aged Gruyere (rich, salty
and sweet) and Beaufort (beefy, sweet and rich). This
is the BEST comte that we have ever tasted and we
are really pleased to be bringing it to you.
We also have just opened a new Lincolnshire
Poacher that was aging since January!
And, we also have the following cheeses back in
stock:
Midnight Moon
Aged Gouda (5yr)
Keen's Cheddar
Fleur Vert
Rivers Edge Chevre
Cabra al Vino
Epoisse
just to name a few. Come in soon as the inventory
changes quickly.

Salumeria Biellese has again graced us with an
abondance of meat. From their hands to yours,
comes
some truly amazing cured pork products. The newest
addition is the small size Tuscan Finnochiona. A
softer cure, this is a great salame to have around the
house at all times. When you need that little snack,
just cut off a little bit. Hunger satiated! Many of the
other wonderful salamis from Salumeria Biellese are
back in stock as well;
Petit Jesu, Finnochiona, Rosette de Lyon, Saucisson
sec Basque, Hot Sopressta, well you know most of
them. These always sell out quickly so don't miss out!

| Fresh Pasta |

We continue to make our fresh pasta on Sunday
morning. We
recently turned out a second batch of ravioli
(gorgonzola and walnut) and will
continue to make it as long as there is interest. We
also hope to eventually sell sheet pasta, for those who
want to experiment a little at home! All of our pasta is
made the old world way with semolina flour and whole
eggs. If you have never tried fresh pasta then you
need
to come in and try it. Fresh pasta will change your life,
and they way you think about pasta.

If you haven't been in the store recently then you are
missing an amazing selection of some of the greatest
beers in the world. Including the newest addition ~
Echigo beer from Japan. Echigo is a small Bavarian-
style brewery in Nigata, Japan. Nigata is known for
great Sake, but these guys are going to make Nigata
known for great beer too. Currently, we have the
Echigo Koshihikari and the Echigo Stout in stock.
Both are
great brews and will make any beer lover happy!

So last month we promised that we were going to
be bringing in a bunch of great wines. Well, we did.
We
have some amazing Crus Bourgeois from Bordeaux
for under $30. These are 2003 and 2005 vintages!
And, they score pretty high too. We have personally
tasted these and all we can say is that if you don't try
them soon, you will be very sad later. We also have a
great new rose in from Chateau Lestrille in Bordeaux.
This is all Merlot fruit and this is the BEST ROSE we
have ever tasted! Others who have tired this recently
agree with us. We are almost sold out of our first
case
and three more are on order, but these will go fast. If
you miss this, you really are missing out on
something extraordinary.

Welcome to the Boomtown! |

We are pleased to announce that we are now the
exclusive retail location in Walla Walla for Dusted
Valley Vintners Boomtown wines. Chad and Corey of
Dusted Valley are good friends of Salumiere Cesario
and they came to us with an idea. Their tasting room
is too small to handle the volume of cases they go
through with Boomtown, people are buying it by the
case! They needed an outlet to sell the wine and we
keep busting their chops to get us something unique!
Two birds, one stone, problem solved.
As a result of this serendipitous event we are going to
be holding a tasting with 'the boys" from Dusted Valley
and featuring their Boomtown wines. Damon will be
pairing the wines with some great dishes and we
might even have recipes to take home and try it out
yourself. The Dusted Valley Boomtown tasting will be
held in our store on
Thursday May 22, 2008 at 7pm. Space will be limited
as always, so sign up early!
