Sunday marked the second anniversary of
Salumiere Cesario. In just two short years, we have
managed to bring Walla Walla a new standard for
cheese, salumi and specialty/gourmet foods. We
have brought to Walla Walla wine and beer from
across the world, salts from the seven seas, exotic
herbs and spices and some really unique (and fun!)
tasting events. We intend to keep striving to find new
and better products to enhance Walla Walla's appeal
as not only a wine, but a culinary destination.

We recently brought in a bunch of new high-end Olive
Oils such as Les Costes Estate Olive Oil from Spain.
Made from 100% arbequina olives, this olive oil is
hand produced in very small quantities and should
replace butter on your table as a condiment. Seriously!
Another oil, Trampetti Extra Virgin Olive Oil
from Umbria, comes wrapped in silver foil and packs
a grassy, peppery flavor. This is amazing Tuscan
Olive Oil, and its 100% ORGANIC from start to finish.
We also have in very limited supply,
including one hand-signed bottle, the very rare
Trampetti XV. This Olive Oil is hand made from the
highest quality olives on the Trampetti Estate in
Umbria, and is only made in very small quantities.
With a grassy and very peppery flavor, this is the kind
of olive oil that you only need a little of to make a dish
sing. Don't miss this one.

We are pleased to announce that we will now be
carrying Monteillet cheese, from our friends at
Monteillet Formagerie in Dayton, WA. If you are a
local, you have likely tasted some of this amazing goat
and sheep-milk cheese. If you are from out of town,
it's worth a trip to Walla Walla to try!

We are continually searching out new salumi (cured
pork products) to add to our vast selection. There are
a few that we are trying to procure, and I won't say any
more until it is on its way here, stay tuned. . .
In the mean time we have the always popular
Fra'Mani products that continue to delight my palate
as well as many of yours. Damon had a chance to
visit with Paul Bertolli at the Food Show in January and
discovered that he is
considering making the salumetto picante (chorizo) in
a larger size, similar to the gentille salame. Again,
stay
tuned and we'll let you know.
We also
continue to be
very impressed by Salumi of Seattle and their
products, including the Agrumi. If you have not had a
chance to taste this yet its because everyone who has
keeps buying it up! We just cannot keep this in stock,
it
is too popular, no matter how much we order. More is
one the way as we write this but we can't guarantee
how
long it will be available.
We have been threatening all of you with Iberico pork
products from Spain for months now. This is the
famed Pata Negra or Black Footed pig that roams the
Dehesas and gorges on fallen acorns. Right now we
can get the full Jamons, but the cost is prohibitive for
all except the ridiculously wealthy. So, we will wait on
the Jamons until the price is more reasonable for the
rest of us. The other Iberico products such as the
salsichons, should be available by early
summer.
And finally, we hope to have all of your favorite
Salumeria Biellese
products back in stock by early May. For more

We continue to make our fresh pasta on Sunday. We
recently made our first batch of ravioli, and will
continue to make it as long as there is interest. We
also hope to eventually sell sheet pasta, for those who
want to experiment a little at home!

Feast Walla Walla |

'Feast Walla Walla' is slated to become the showcase
event for the hospitality industry of the Walla Walla
Valley, promoting the uncommon quality of local food,
wines, art and lodging. Feast Walla Walla is a
cooperative community endeavor that strives to create
an environment of business entrepreneurship to
benefit the participants as well as the attendees
during
a traditionally quieter time of the tourism year. Local
organizations including the Downtown Walla Walla
Foundation, Tourism Walla Walla, the Walla Walla
Valley Chamber of Commerce, and members of the
Walla Walla Valley Wine industry have been
instrumental in establishing this event. Proceeds will
benefit the Downtown Walla Walla Foundation, an
organization dedicated to the enhancement of Walla
Walla's historic downtown.
The first annual 'Feast' will be held on Saturday, April
12, 2008 from 1pm to 4pm. Our historic, award-
winning downtown will set the scene for a fabulous
afternoon of gastronomic and sensory entertainment
in
a heated, canopied venue covering First Avenue,
between Main Street and Alder. Ourselves, along with
over 50 other vendors will be sampling their wares
including 16 fine restaurants and food purveyors, 29
wineries, and 10 exceptional artists. Musical
entertainment will provide additional ambience and a
chance to take a moment-and a sip-from a busy
and delightfully creative atmosphere. Adding to the
attendee's experience will be availability to purchase
the wines being poured throughout the afternoon. Net
proceeds from the retail sales of bottled wines will
benefit the Downtown Walla Walla Foundation and
their mission.
