What is Raw Milk?
Milk is milk, right?  Not exactly.  Just like not all tomatoes are the same - not all milk is the same.  Raw milk is the milk that comes directly from the cow.  It has not undergone pasteurization or had anything added to it.  It's the milk your grandparents used to walk to the nearest farm to get - right after the farmer hand-milked the cows.

 

Today, all milk you buy in the stores is pasteurized and homogenized.  Pasteurization is a heating process used to sterilize raw foods in order to destroy bacteria and enzyme activity. Thus increasing the shelf life of the product.  Homogenization is a high pressure process designed to reduce the size of fat particles in whole milk so the cream can't separate and form on the top. (So much for cream in your coffee!).  Raw milk is NOT pasteurized or homogenized. 

 

Many question the safety of raw milk because it is not pasteurized.  All food runs the risk of contamination from bacteria - raw milk is no exception.  The risk of contamination depends on how the cows are raised and the milk is processed.  You are what you eat - in this case - what the cow eats!  Milk from cows heavily fed on grains, cottonseed meal, and soybeans MUST be pasteurized.  Whereas, cows pasture fed mostly on grass are preferable.

Raw milk from pastured cows has several notable health benefits.  In itself, it is a complete and balanced food.  Raw milk contains all of the 8 essential amino acids we need.  It boosts the immune system because it is high in antibodies and immunoglobulins (things that are typically destroyed by the pasteurization process). Lactose intolerant people can typically drink raw milk because it has natural lactose-digesting bacteria in it. Although high in saturated fat, raw milk contains the kind of fat that is linked to boosting immunity, improving metabolism, and lowering allergic reactions. Because raw milk has 60+ enzymes in it that aid in it's digestion, the body has to do less work to digest it.  Thus, taking the stress off of our pancreas.  AND, raw milk is packed with natural vitamins and minerals! 
  
If you're not a milk drinker, we're not trying to make you into one.  BUT if you are a milk drinker, we thought we'd give you some helpful information about another milk option with great nutritional content.  And, you can buy it locally!  F&C Brooks & Sons Farms in Stone Ridge (Tongore Rd) sells raw milk for $2 per half gallon - you supply the Mason jar or buy one there for $2.  Their cows are pasture fed and their dairy farm IS certified to sell raw milk.  If you decide to stop by the farm, tell them Pizza Barn sent you. :)
