Apple Feta Chicken Recipe

Greetings!

This week's newsletter is a short one. Just a reminder that Tuesday, December 23rd, is the last day of the season. Many people are only one or two visits away from getting the Thank You Program discount. Stop in and see us soon!

We have had a wonderful year and I will miss seeing everyone. But with the start of the new year comes our next project, a kitchen, so we will be busy and anxious to share our progress with you.

Recipe of the Week

This week's recipe is for Apple Feta Chicken.

I made it for my family for dinner last night and my youngest asked for seconds. If you know her, you know that she hardly eats anything - but she does like apples and the chicken has some apple flavor so I guess that's why it was a hit.

My changes to the recipe:

I cut the apples into wedges as directed (the original recipe says to cut each apple into 8 wedges) but I think next time I will use my apple slicer/peeler and lay the apple slices on the chicken instead. I think I will also increase the amount of apple juice or maybe try cider next time. The recipe calls for one green and one red apple. I used two Fuji apples because that's what I had at home. I think Stayman would be really good too.
