A Gallic Journey Without Leaving Home
Coq au vin with French Riesling
reprinted from July 17th. Wall Street Journal
For Bastille Day, "Tastings" columnists
Dorothy Gaiter and John Brecher from The Wall Street Journal make white wine coq au vin and pair it with inexpensive French favorites.
The first decision we had to make was what kind of white wine we'd use in the coq au vin, and then drink with it. Dottie ultimately decided on Riesling from Alsace. She felt it would have the combination of acidity and heft to, at once, stand up to the chicken and lift its flavors. We bought a small sampling of some of our long-time favorite Rieslings from Alsace (Hugel, Willm, Trimbach, Sparr and Blanck) and, before she cooked, conducted a quick tasting. They ranged in price from $10.99 to $20.99. We liked all of them, but the Blanck stood out. Riesling from Alsace is a remarkable wine, with earthiness, some white pepper and all sorts of fruits, from lychee to kiwi to white peaches, but it can sometimes be a bit somber. We especially liked Paul Blanck 2006 ($17.99) because it had a particular liveliness, with its white peach and pepperiness, that added charm and vigor.

When I am asked to recommend a white wine I often hear the same statement repeated. "I don't like sweet wine". While this is understandable, (people do have their preferences) it is important in the development of the palate to experience and understand all types of wine. Riesling is one of the most misunderstood white wines. Germany has become associated with, Liebfraumilch (who doesn't remember their first bottle of Blue Nun) and Rieslings that are overly sweet and bland. What a sad misconception.
German Rieslings come in six levels of sweetness. Kabinett, the first category is a light, dry wine. It is wonderful as an aperitif, showing green apple and citrus fruit flavors. Think of these wines paired with a lovely summer salad and a crusty loaf of rosemary bread. What could be more appetizing? The nicest surprise of all is that the alcoholic strength of a Riesling rarely tops 8%.
I invite you to come explore the world of German and Alsatian Riesling with me. There is so much to learn and if the weather cooperates, we will be outside on Nancy's lovely wedding garden area enjoying some lovely wines paired with fabulous hors d'oeuvres.
