The end of year "Elegant Festive" dinner class is December 1, 2007. L'Auberge at The Edge of Seattle is committed to featuring renowned selected chefs who will teach world class French cuisine centered on the freshest of seasonal bounty available in the Pacific Northwest.

Regional French Cuisine: Flanders at it's best!

Chef Tom Black has the honor of finishing up this year's cooking program with this hands on class. You can socialize, learn new recipes and develop new cooking-skills as you prepare and share a meal all of which are tools you can incorporate into your next dinner party.

In France eating and talking about food are favorite pastimes. The "tip top" northern part of France is called Flanders. The French Flanders are culturally a mix of Flemish (Dutch) and French heritage, where you will find some speaking French and others speaking Flemish (a type of Dutch). The food is also influenced by these two cultures; the cheeses remind us of Holland cheeses and a meal is never complete with out celebrating the versatility of the potato. Fertile farmland, well-stocked streams and the sea provide abundance for Flemish cooks. For a taste of this bounty, join our chef in preparing 'hands on" a luscious festive elegant dinner from the Flanders area of France. The nearby Champagne region comes the world's finest sparkling wine to accompany this menu.

Each class consists of four courses and is limited to a place setting of twelve. Expect the table setting to be exquisitely appointed with crystal stemware, sterling silver setting, fine china and hand embroidered table linen. Class folder provided with Chef bio, menu and recipes.
