Christmas starSummer is almost here, and the Christmas festive season is just around the corner. As the weather warms up, we tend to eat differently and entertain more, but we all want to eat healthily (and keep the waistline under control). Try our summery mushroom recipes – deliciously easy and impressive when you are gathering family and friends.

Feast your eyes on these salads. Roasted Mushroom, Tomato & Cashew Salad; this recipe has superb texture, is loaded with flavour, and its festive colour combination makes it perfect for adding to a Christmas buffet or taking to a friend's barbecue. Another top choice is the Mushrooms & Antipasto Salad. This recipe teams firm, white button mushrooms with semi dried tomatoes, char-grilled eggplant and honey roasted cashews to make a scrumptious, crunchy mouth watering salad.

For a mushroom salad that is a meal in itself, you are going to want to try our Barbecued Mushroom & Lamb Salad. Loaded with flavour this recipe is a real winner and ideal for impressing family and friends.

 
 

A quick BBQ tip

Don't grease the BBQ plate until after it has been cleaned and pre-heated. Adding the oil too early will cause the oil to burn before the plate is hot enough to start cooking. The burnt oil will also taint the flavour of the food.

When it comes to celebrating Australia Day the barbecue certainly gets a good workout. So why not use the Christmas / New Year period to hone those barbecue skills in time for Australia Day. And when it comes to mushrooms on the barbecue, there's a range of delicious recipes to make you the star of any celebration.
