Here at Teltek, we hope that you had a wonderful holiday season and are enjoying a great start to the 2010 New Year!
 
Whether or not you believe the accuracy of Punxsutawney Phil, in early February, he saw his shadow predicting six more weeks of winter.  With the previous amounts of significant snowfall, the countdown has begun to the first official day of Spring, Saturday, March 20th!

While there is definitely some respect for the beauty that the snow provided across the region, there was also a lot of destruction involved.  The one event that hit close to home was the partial destruction of the Sykesville - Freedom District Fire Department in Sykesville, Maryland.  Not only is the Fire Department a long standing and valued client of ours, it is also where Chris Nicoli, a Certified EMT was a department volunteer.
 
On Thursday, February 11th, the Fire Department roof collapsed, landing on a gas line causing a fire to break out and ravished through a large portion of the firehouse, destroying the social hall.  The leaking natural gas from the roof collapse fed the fire, allowing it to spread quickly.  Luckily, Fire and EMS crews were on a cardiac arrest call at the time, causing most personnel and equipment to be off premises.  The personnel still at the station heard the collapse and evacuated the building immediately.
 
The Teltek team was onsite early Monday morning, February 15th to assess the damage and provide services and support.  With a concerted effort, time and service from members of the firehouse, volunteers and the Teltek team, a temporary phone system, tents and trailers were put in place so firefighters and EMS personnel could continue to support the community.

IP Office Release 6

Snowmageddon 2010
 
Although we are not in the clear of experiencing some possible additional snowfall, I believe we are all happy to have Spring on the way and Snowmageddon 2010 behind us.  The first snow storm dropped 20 - 26" of snow, while the second storm dropped between 18 - 22" of snow in the Baltimore/Washington area.   Within a week, most areas saw 40 - 50" of total snow fall.
 
During this crazy week of snowfall, a significant amount of businesses had to shut their doors and operations ceased, accounting for huge losses in production, time and money.  While a State of Emergency was in effect, Teltek was open and fully functional.  All staff members worked in a remote location with the Avaya IP Office System VPN phones.  We have a weather policy in place for telecommuting and all of our employees have VPN phones and remote computer connections.  With this equipment, Teltek's staff was able to answer and transfer calls, hold conference calls for meetings that were unable to be attended and complete remote troubleshooting of the systems, including adding closing messages to many clients' offices.

SIMPLE CHICKEN CORDON BLEU

4 skinless, boneless chicken breast
4 slices Swiss or Provolone cheese
4 thin sliced smoked ham
1/4 cup all-purpose flour
1 egg; beaten
1 cup Italian seasoned bread crumbs
4 tablespoons butter
1/2 cup chicken broth
1 cup whipping cream
Dash of Cream Sherry
Chopped parsley for garnish
 
Pound chicken breast to 1/4-inch thickness.  Sprinkle each piece on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on each breast.  Roll up each breast using toothpicks to secure if necessary. Dredge each in flour, shake off excess, then in egg and finally in breadcrumbs.  Place seam side down in baking dish that has been sprayed with Pam.  Place 1 tablespoon butter on each piece of chicken.
 
In a saucepan, combine broth and whipping cream; season to taste (salt, pepper, garlic, oregano, sherry).  Simmer on low, stirring until thickened (may need to use some flour to speed up thickening - if you do ensure that you cook sauce long enough to remove flour taste).
 
Optional: Use a flavor injector to insert 2-3 tablespoons of sauce into each piece of chicken.
 
Bake at 350°F for 35 minutes or until juices run clear.  Pour remaining sauce over chicken, garnish with chopped parsley and serve.
